help! need meatless recipes

My husband decided that he wants to eat less meat. I have no idea what to make now. Just looking for some dinner recipes that are easy. Could use breakfast for dinner recipes too, like spinach quiche or something along those lines. Thanks

Here is a vegetable lasagna



 



6- no boil lasagna noodles or reg. lasagna noodles



8-oz zucchini and/or yellow summer squash halved lengthwise and sliced



2-c sliced fresh muchrooms



1/3-c chopped onion



2 tsp olive oil



1-c fat-free or low-fat ricotta cheese



1/4 -c finely shredded Parmesan cheese



1/4-tsp black pepper



red pepper sauce



1-c shredded part-skim mozzarella cheese



1 med tomato seeded and chopped



fresh oregano sprigs (optional)



 



Soak, the no boil noodles in warm water for 10 min. (or cook reg. noodles according to package direction except omit salt.  frain



 



Meanwhile, in a large skillet cook zucchini and /or yellow squash,mushrooms, and onions in hot olive oil about 6 mins. or until squash is tender,stirring occasionally.  drain well.



 



In a small bowl stir together ricotta cheese, parmesan cheese and black pepper.  to assemble,place 3 lasagna noodles in a 2-qt sq. baking dish,trimming to fit as necessary.  Top with ricotta mixture, half of the vegetable mixture, half of the red pepper sauce and half of the mozzarella cheese.  Layer with the remaining lasagna noodles, veg. mixture and sauce.



 



Bake in a 375 degree oven for 30 min.  Sprinkle with remaining mozzarella cheese and the tomato.  Bake 5 min. more or until heated through.  Let stand 10 min before serving.

RED PEPPER SAUCE:  In a large skillet cook 3 c. chopped red sweet pepper and 4 whole cloves garlic in 1 tbsp olive oil or cooking oil over med heat for 20 mins, stirring occasionally.Place mixture in a blender container.  Cover and blend until nearly smooth.  Add 1/2 c water, 1/4 c tomato paste, 2 tbsp red wine vingar, ad 1 tbsp snipped fresh oregano or 1/2 tsp dried oregano, crushed.  Cover and blend just until nearly smooth. Return to skillet:  heat through.

vegi stir fry. I love it with fried noodles. also, we have diet plate night. cottage cheese, all kinds of vegi cut up for dipping, and boiled eggs. although, i am not sure if you eat egg. my kids always ask for crapes for dinner. you can fill them with just about anything! i love to fill my with fresh cooked apples and have a yummy cup of coffee on the side (not for the kids) lol

Grilled portabellos are awesome. You can stuff them with whatever you like and bake them or grill them. Stuffing ideas: diced tomatoes, onion, basil, fennel, cheese, jalapenos. Or tuna and swiss. You can also use the portabellos as hamburgers. Grill them and put them on toasted buns!

pasta pasta and more pasta. spaghetti. soups, like hearty bean stew or veggie soup. you can make vegetarian lasagna, or vegetarian chili using ground up garden burger, or they sell "tofu crumbles". You could make a casserole with broccoli, rice, cheese, and cream of mushroom soup.

Hi Brenda, I don't really eat meat so here's a few ideas: Pasta Salad. I use the twisty tri-colored pasta (sorry, the name escapes me) cube monteray jack cheese, add olives and toss with zesty Italian dressing. Baked salmon, with rice and asparagas. chesse and/or potatoe enchiladas. Tuna and cheese sandwiches.
