Feeds 6-8 adults:

Ingredients:
1 cup prepared brown rice (or basmati)
1 green bell pepper diced
1 small onion diced
1 can diced tomatoes
1 lime
1 cup prepared black eyed peas
1 lb. ground beef
1 bag shredded cheddar or Parmesan cheese
cilantro to taste
olive oil

In a large skillet, saute onions in olive oil until just soft. Add ground beef and cook until done. Add green peppers, black eyed peas, can of tomatoes, juice from lime, and cilantro. Cook until peppers are just tender. Serve over the prepared rice with cheese to top it off.
