I have a cold salad recipe that is a must try. It's a taco salad side dish that I usually make for family gatherings. Some people add browned hamburger. From one Simple and Delicious magazine lover to another, I hope you enjoy it.
1 head of lettuce, torn and cleaned
1 envelope taco seasoning
1 can dark red kidney beans, drained and rinsed
1 bag Doritos (I use taco flavored)
Western dressing (this one isn't really measureable)
1 bag shredded cheese (again, I use mexican blend)
You could maybe add black olives, onions, or hot peppers or tabasco, but I've not tried it yet.
Combine all ingredients into a large bowl. You will want to add Doritos just before eating so they stay crunchy. When adding the Western dressing, just add it until it looks wet. That part takes a little practice, but you'll get the hang of it.
