I need a good recipe for potato soup.

My husband LOVES potato soup but says my version is bland. Anybody have any ideas on how I could maybe spice it up a lil (not too much) and have it tasting delicious next time I make it?

My Husband loves this!


3 lbs red potatoes

1/4 cup butter

1/4 cup flour

8 cups half-and-half

1 (16 ounce) package Velveeta cheese, melted

white pepper

garlic powder

1 teaspoon hot pepper sauce

1/2 lb bacon, fried crisp

1 cup cheddar cheese, shredded

1/2 cup fresh chives, chopped

1/2 cup fresh parsley, chopped


1Dice unpeeled red potatoes into 1/2 inch cubes.

2Place in large saucepan; cover with water and bring to a boil.

3Let boil for 10 minutes or until 3/4 cooked.

4In a separate pan, combine melted margarine and flour, mixing until smooth.

5Place over low heat and gradually add half-and-half, stirring constantly.

6Continue to stir until smooth and liquid begins to thicken.

7Add melted Velveeta.

8Stir well.

9Drain potatoes and add to cream mixture.

10Stir in pepper, garlic powder and hot pepper sauce.

11Cover and cook over low heat for 30 minutes, stirring occasionally.

12Place soup into individual serving bowls and top with crumbled bacon, shredded

easy potato soup.....bacon cut up and brown I use just the cheap bacon peices take out and set aside. Add potato(peeled and cut up) in same pot don't drain off grease add water to cover potato's boil to desired texture. While potato's are boiling cut up onion once potato's are done you can drain off a little of the water(sometimes I do and sometimes I don't if you do just about 1/4 of the water) add onions canned milk I use 3-4 cans depending on how much you make add the bacon back add salt and pepper to taste and enjoy

BACON!!! lol just make sure you use enough salt and pepper..potatoes take a lot of salt(i use sea salt so its healthier..well it seems healthier anyway haha) i always add all the stuff i would put on my baked potato(bacon,green onion,cheddar cheese) on top of the soup..as you eat it it all mixes in...BUUUUT if ur lookin to spice it up for ur hubby..when you sautee the onion(im assuming that is one of ur first steps..haha) add some spicy sausage(andouille or chorizo) and its a nice spin on simple potato soup! hope i helped! =D
