I need easy 1 dish meals!! HELP!!

OK..so my best friends dad past away..I have been bringing meals over there that just need to go in the oven. I have done, Ziti, Homemade pizza, stuffed peppers and enchilada stack ups. I need more ideas please! Easy, affordable and oven ready or re-heatable. I'm looking for a nice variety of foods. Any suggestions would be gratefully appreciated!

Shepard's pie, mac and cheese (always good) chicken_n_ gravy: coat chicken pieces in mix of flour, pepper, salt, paprika, Fry in skillet, (or dutch oven...in your case transfer to disposable pan) brown more of flour mix and add to top of chicken. Cover with water and foil place in 350 oven 45 min to hr. gravy makes it's self.

My sister makes a great potato casserole. If you wanted to add ham or chicken, you could do so easily. It takes about 6 minutes to throw together and reheats well.



1 bag of frozen cubed potatoes (Ore-Ida is fine)

1 can of cream of chicken soup

2 large containers of sour cream

2 bags of shredded cheese

Dash of onion powder, garlic, salt, pepper to taste



Mix everything together and bake in the oven at 375 for 30 minutes.



Topping (Optional)

3 cups of crushed corn flakes, melt 5 tbsp butter and mix together. Sprinkle over top of casserole.

Caesar chicken pasta bake

use a pack of chicken cooked anyway you want I boil mine in seasoned water then cut up into bite size pieces, cook one box ziti pasta when chicken and pasta are done mix together with one bottle of creamy Caesar dressing, place in casserole dish top with crushed croutons and parm or any white cheese will do just fine for 35min on 350 degrees.

How about veggie beef soup? freezes well and good for lunch or dinner (my 2y/o eats it too. I'm not sure how many people ur trying to feed but these recipes are for typically four. )Brown 2 pounds ground beef with a medium onion chopped fine. drain. add 1 bag frozed mixed veggies, 2 lrg cans beef broth, 1-2 cans tomatoes with onion and garlic (or whatever flavor you like), and water (i usually add about 4 cups per can of broth). Salt, pepper and Italian seasoning to taste. Bring to a boil and simmer until veggies are tender.(if it looks like you need more water, just add it with a beef boullion cube or two) I have an easy chicken casserole- cook chicken breasts (2-4 depending on size) until just done. Shred or cube. Mix with cream of chicken soup (2-4 cans depending on the amount of chicken and how creamy you want it). Add a bag of mixed veggies (thawed) and stir to combine. Put this mixture in a casserole dish. Prepare a box of stuffing and put on top of chicken and veggie mixture (it won't cover it completely) Bake until heated through (325-350 degrees). it freezes good too. I also have a quick chili recipe (daughter eats this too) Chop 1 bunch celery and 1 large onion. Cook in some water until tender. Reserve the water. Brown 2 lbs hamburger and drain. Combine hamburger, celery, onion, 1-2 cans red kidney beans (drained/rinsed), at least 4 lrg. cans tomatoe soup, and enough water to thin it to the consistency you like (start with the reserved water from cooking celery and onion). Add chili powder and pepper to taste. Bring to boil then simmer for a little while. Freezes good also. And i have a quick kid-friendly meal.( It's like a fake Hamburger Helper dinner. )Brown 2 pounds ground beef and drain. Prepare 2 boxes Mac N Cheese. Combine the beef and mac n cheese. You can then leave as is or add a can of tomatoes (whatever flavor u like) or veggies. (My husband came up with this one) i hope that these might help. if u have any questions let me know. it's hard to keep it simple but get the details down in such a small space.
