I want to cook for my husband more, but don't really have very many recipes for 2. If you have any healthy recipes that would be great too. thanks

We just buy packs of four or six lamb chops or chicken portions etc, put it in to freezer bags in to portions for two, We tend to have lots of soups, the easiest one is:



Tomato soup,



Ingredients:



A tin of chopped tomatoes



1 Red onion



Basil, Fresh, but if not then dried will do



a rasher or two of bacon



veg/chicken stock



Just saute your finely chopped onion and bacon, add the tomatoes, stock, basil, salt and pepper, simmer for about 15-20 mins then blizt with a hand blender or in a jug blender. We tend to add chilli to ours, or sundried tomatoes, garlic and paprika. Balsamic vinegar etc. Just experiment and add what ever you like depending on your taste. If you would like you could have a bread roll with too. I find my slow cooker if fab for meals for two, I just do veg stews, currys, thai curry is lovely! Spaghetti bolognaise, chilli, Pasta, and a selection of potaotes/rice and vegatbles.



Thai Green curry



So simple,



Chicken or other meat if you would like roughly two breasts or thighs



Thai green curry paste



Coconut milk



Green beans



Onion



Rice to serve.



Just put the meat, chopped onion and green beans in the slow cooker, thai paste, coconut milk then just stir occasionally, cook for a few hours of high then turn it down and serve with rice.



 



For dessert you could have a fruit crumble or a fruit salad?



Apple crumble:



50g Sugar



50g Butter



100g Flour



Tsp cinnamon



1 Large cooking apple and 1 eating apple



I just peel and slice the apples and put in the bottom of and over proof dish, Then in a bowl mix the butter and sugar up with your hands, rub it until it resembles breadcrumbs, mix in the sugar and half the cinnamon, mix the rest of the cinnamon in with the apple. Pour bread crumb mixture over the fruit and bake on 180c for 20-30mins or until slightly brown on top. Serve with Icecream or custard. You could add raisens or sultanas to the apples before baking if you wish to.



I know these are simple ideas but we enjoy them and we manage to get variety and our 5 a day fruit and vegatables. Hope this helps.

2 boneless skinless chix breasts



chix stock



In a pan that is oven safe, saute chicken in small amount of oil.  When brown on both sides, move to 400 degree oven to finish.  Remove chicken from pan, deglaze with alcohol of choice (sherry, white wine, amaretto, etc.).  Reduce liquid by half, add chix stock, reduce by half.  Taste.  Add salt and pepper to taste.  Remove from heat and whisk in 2-3 tablespoons of butter (you might need to go back on the heat, but you don't want the butter to separate).  Pour over the chicken and serve with rice or potatoes and veggie of choice.



PS.  This only takes about 20 mins start to finish and it's how restaurants make all those chicken dishes.  Make sure the inside of the chicken is @ 165 degrees minimum before removing from oven and cover with foil while you make the sauce.

Mushroom Chicken:

Brown one onion and 150g Cubed Chicken once browned add in 100g sliced mushrooms. Let cook for 3 min. Than add a small can of evaporated milk and 2 tblps of Soy sauce let simmer. Mix in I cup of Cooked pasta and serve with Green beans
