I'm the mother of three children ages 5, 7, and 10. My kids are great eaters they love food and have yet to meet a vegetable they didn't like...yes I consider myself lucky... However I think a big part of their good eating has been that I introduce them to all types i.e.. different cultural foods. My youngest is like a vacuum he'll eat it all no favorites yet , my middle I am convinced will end up vegetarian, he easts meat but always goes strait for the veggies, and my oldest loves all kinds but is limited by a severe seafood allergy.

So I'm looking for exciting recipes to make, seafood free, any help would be great! Thanks

I have a really easy and good casserole! Fiesta Chicken Casserole

2 cans chicken drained

1 can black beans drained and rinsed

1 can cream chicken soup

1 cup sour cream

1 jar 16oz salsa

2 cups shreaded cheese

24oz frozen corn

2 refrigerated pie cruse at room temperature

Mix all ingredients in a bowl. Put mix in 9x13 pan, cover with pie crust. Bake 40 min at 400 degrees.

It is so easy and really good. I use low fat or light everything so it makes it fairly healthy!! Enjoy!!! and CHEAP!!!

stuffed-pork chops

loin pork chops (1 inch thick)

favorite stuffing

cut a pocket in each chop from the fat side almost to the bone. spoon about 1/4 cup stuffing into each pocket.

in a skillet brown the chops. transfer to a slow cooker. pour chicken broth [approx 3/4 cup] over chops. cover and cook on 8 hours or until juices run clear.

[these chops are very moist and practically fall apart when you pull them out] well worth the time it takes in the crock pot.

Amanda,

You are so blessed to have good eaters. I'm not sure how exciting this recipe is, but it's super easy, feeds alot, and everyone in my house eats it.

Ravioli Skillet

1/3 cup whipping cream (i use skim milk)

4 cups loosely packed fresh baby spinach leaves

6 oz provolone cheese, grated

1 tbsp olive oil

3 garlic cloves, pressed

2 cans (14.5 oz) diced tomatoes with onions, undrained

1/2 tsp salt

1/2 tsp coarsely ground black pepper

1 pkg small frozen cheese ravioli (about 65)

Measure cream using Easy Read Measuring Cup. Wash spinach in large Stainless Mesh Colander; drain. Grate cheese using Ultimate Mandoline fitted with grating blade. Set aside cream, spinach and cheese.

Add oil to (12-in./30-cm) Skillet; heat over medium-high heat 1-3 minutes or until shimmering. Press garlic into Skillet with Garlic Press; cook and stir 15-20 seconds or until fragrant.

Add tomatoes, salt and black pepper to Skillet; cook and stir with Bamboo Spatula 1-2 minutes or until simmering. Add ravioli; stir to coat. Cook, uncovered, 4-5 minutes or until tender. Stir cream into Skillet. Cook, uncovered, 1-2 minutes or until simmering. Sprinkle spinach over ravioli; cook, covered, 1 minute or until spinach starts to wilt.

Remove Skillet from heat. Top with cheese; cover Skillet and let stand 1-2 minutes or until cheese is melted.

Some of my favorites are:

Megadarra, a dish of lentils and rice with carmelized onions--I really like broiled eggplant slices with yougurt on the side, and maybe a fried egg.

Tamale Pie: Polenta in a large dish, covered with beans and ground beef, enchilada sauce, and topped with cheese, and baked until all hot and melty.

Stir-fry is really versatile, and can be done with pretty much any combination of protein and vegetables you have on hand. You can change the sauce--add orange juice concentrate if you want it more sweet and sour, and sesame oil (at the very end) if you like that flavor, or oyster sauce, or more ginger or garlic, not to mention hot sauce (we like Sriracha) or crushed red pepper if you like it spicy.

I am married with four kids between the ages of 4 and 15. This is one of the few recipes everyone of them will eat. It's so easy and can be made in about 15 minutes.

1 pound ground beef
1 can of French onion soup
hamburger buns

Brown ground beef and drain. Add soup and cook until most of the soup is absorbed. Serve on hamburger buns with ketchup, mustard and mayo.

This goes great with any veggie dish. I usually make this when we are going to have a busy night.
