Chicken Noodle Soup: (lots of leftovers and I freeze about 1/3)
1 cut in half chicken
1 gal of water
some Lawrys salt, pepper, 3-5 chicken bouillon cubes
boil for 1 1/2 hrs
cut up cut up 4-5 celery stalks, 6 large carrots,
take out chicken, cool and remove bones, cut in pieces
boil celery and carrots for 15 mins
boil noodles or rice in separate pot (don't overcook) and
add all together stir
I also like making Fettuccine Alfredo with Chicken or Chicken Pot Pie.

I have the same problem here with my boyfriend. He had food poisoning once and he is sooooo picky with anything I make...especially chicken. Here are a couple of ideas that I used on him ...and he really enjoyed them!
Chicken Sliders
1 Chicken breast per person
1 jar of sauce...BBQ, spaghetti, buffalo, teriyaki or anything else that sounds good
Cook chicken breasts (on low) in the crock pot until the meat falls apart.Take breasts out of the pot and drain the juice (save it though) Shred the chicken and put it back in the crock and add jar of sauce. Stir well. Serve on burger or slider buns. Top with a favorite cheese. Use chicken juice to wet the meat if it gets too dry.

RECIPE FOR ROTELL CHICKEN ...........


ingredients : 1 bag of boneless skinless chicken breasts

2 jars of double cheddar cheese

1 pound thin spaghetti noodles

2 cans of cream of chicken

1 or 2 cans of rotell tomatoes

1 can of mushrooms


I use a stockpot to boil my chicken , and add 4 chicken bouilion cubes , when chicken is done , take it out and let cool , then add your spaghetti noodles in the same water u boiled chicken in ..... cook noodles til done ...... save some juice for casserole , cut chicken in cubes , mix up all the rest of ingredients plus salt and pepper , til bubbly .. get a rotisserrie pan and add the ingredients the spaghetti and chopped chicken , add juice if you need too ..... mix all up together , and bake at 400 til hot ........

here's the recipe for it. 3tbsps, of vegetable oil,1chicken about 3lbs cut up,1 garlic clove crushed, 1/2 of a cinnamon stick1/4tsp ground saffron,1/4tsp freshly ground pepper.1lb of onions peeled1/4lb of blached almonds.2tbsps of chopped parsley. 1/2tsp of salt.in a lrg flameproof casserole dish,heat oil over medium heat, add chicken, cookturning until brown on all sides and cooked threw well, about 10-15 minutes, then add garlic, cinnamon, saffron. and pepper, cook for 1 minute, then add onions, almonds, parsley,salt, and 2 cups of water, partly coverand simmer for 30minutes until chicken is tender,remove chicken to a serving platterspoon onions,almonds,and some sauce over chickenserve rest of sauce seperatly for garnishing, i have plenty of chicken recepies about 365 ways to cook chicken. tc and i hope you try this receipe out. let me know how it turned out. byue 4 now

I grew up w/this this recipe, it's a spanish chicken & rice 1 pot dish.



Arroz con Pollo



1 whole chicken cut-up

1 can or small pkg of frozen mixed veggies

1 green bell pepper-diced

1 red bell pepper-diced

1 onion diced

2 garlic cloves-minced

2 TBS of olive oil

1 (4oz) can of tomato sauce

1 bay leaf

1 tsp of dried basil

1 tsp of dried oregano

1 small pkg of yellow saffron rice (or 1 1/2 cup of white rice w/ 1/4 tsp of saffron)

1tsp of salt

1 tsp of ground black pepper



On the stove top on med-high heat, in a large pot or dutch oven, saute onions & garlic in the olive oil until soft & translucent, then add chicken & brown slightly. Add about 1 qt. of salted water & boil chicken until cooked through (water should be reduced by at least 1 cup). Lower heat to medium & add the remaining ingredients. When pot begins to boil again, reduce heat to medium-low and simmer, covered, for about 1/2hr. or until rice has full cooked &absorbed almost all of the liquid. Remove bay leaf before serving.



Here's another Carribbean chicken dish



1 whole chicken cut-up

1 large or 2 small peeled sweet potatoes-cubed

1 cup of flour

2-3 TBS of olive oil

1 can of pineapple chunks (keep liquid)

1 cup of orange juice

1 TBS of lemon juice

1 clove minced garlic

1 onion-diced

Salt & Pepper to taste



You'll need a large frying pan. dredge chicken in flour seasoned w/Salt & Pepper. Heat olive oil in pan on med-high heat & cook chicken until done. Remove chicken from the heat & set aside. (add more oil if needed) Saute onion & garlic until they begin to carmelize. Add sweet potato chunks, pineapple chunks w/liquid, lemon & orange juice, cook 'til it begins to boil then reduce heat to medium & simmer uncovered until sweet potato chunks are soft. (liquid should reduce by 1/2 if liquid reduces too much add a little more o.j.) Add cooked chicken back in w/pineapple & sweet potato & continue to simmer until chicken has reheated. It can be served with or over rice.

Xtra Crispy Chicken Drumsticks

1 pkg chicken drumsticks (how ever many will feed your family. I usually estimate 2-3 drumsticks per person. You can also use thighs)
1 carton buttermilk
1/2 cup seasoned flour
1-2 cups crushed Corn Flakes
2 eggs beaten
Seasoned salt (like Lawry's with no MSG)
Garlic powder
Dried Italian herbs

Soak drumsticks in buttermilk overnight or for about 4 hours. Season the buttermilk with seasoned salt. This will tenderize & flavor them, as well as make them juicy and get rid of that "raw" chicken taste.

Take 3 shallow bowls. Put flour in 1 bowl. Season with seasoned salt, garlic powder & herbs. Put eggs in another bowl and beat them with a little water. Put finely crushed corn flakes in 3rd bowl.
Preheat oven to 400
Get a cookie sheet with a wire rack ready.
Drain all the buttermilk off. Make an assembly line. Dip drumstick in flour, shaking off excess. Then dip in egg wash, and then roll in corn flakes. Repeat until everything is coated. Place in 400 degree oven for 15 min to crisp up the skin and seal in the juices. Then turn the temp down to 350. Bake for another 45 min. Enjoy these crisp and juicy drumsticks!

Cheesy chicken stuffing.

1 box chicken flavor stuffing. Prepare set aside

Cook cut up chicken

place in a 14x9 oven dish, with 1 can cream of chicken soup, 1/2 cup milk and either 1 bag of frozen broccoli or green beans, and 1 1/2 cups ched cheese. stir altogether. Put stuffing all over top of the mixture. Bake for 30 min at 350 or untill heated through. YUMMY and easy

You can make chicken Pizzas (without bread) my kids love them. butterfly cut the chicken fillets spread on some tomato purree, put chopped onions and peppers on and put in oven, after 15 mins grate some cheese on ( i use goats cheese) and pop it back in for 5 mins, serve with homemade wedges,

Chicken and Broccoli Cassarole
In a cassarole dish make a layer of cooked rice. Then a layer of broccoli, and then the chicken on top (if it is cut in small chunks it makes serving easier). Then poor a can of cream of mushroom soup with about 3/4 can of water over it.

Not sure how picky he is but try this. Marinate your chicken in any kind of vinagrette or italian dressing. You can then grill or bake the chicken and add to pasta, salads or whatever. It gives it a great flavor and is a change from the same old everyday thing. My favorite is the greek vinagrette with feta and olive oil. Another thing that may help is turkey products. Our family does a lot with turkey (ground or sausage, bacon). Try this one: 1 pound of chicken if that is all he will eat ( I generally use the turkey sausage), brown in a little of olive oil, add italian seasoning, thaw out 1 pack of creamed spinach, add 2 cans of diced tomatoes( basil, oregano added) and cook together until tomatoes and spinach are warmed through. Cook pasta and sprinkle with cheese if you like. Hope you guys esnjoy!

EW, I JUST TRIED ONE AND I HAVE ANOTHER I'M GOING TO TRY THIS WEEK. I HAVE 3 PICKY EATERS IN THE HOUSE SO.....THE FIRST ONE THAT I DID TRY ALREADY WAS POUNDING FLAT CHICKEN BREAST, PLACING TURKEY BACON(IF HE WILL EAT IT) BELL PEPPERS SLICED AND SEASONING OF YOUR CHOICE. ROLL THEM UP AND BROWN EACH SIDE IN OLIVE OIL THEN BAKE IN OVEN ANOTHER 20 MINUTES. IT WAS REALLY GOOD. I HAVE YET TO TRY THIS ONE: POUND OUT CHICKEN BREAST, COVER WITH FLOUR THEN DIP INTO MILK, THEN FINALLY COVER WITH ITALIAN BREADCRUMBS. BROWN ALL SIDES AND THEN PLACE WHATEVER SEASONINGS YOU WISH ALONG WITH A CAN OF ROTEL DICED TOMATOES AND BAKE. GOOD LUCK!

I have something... its good, cheap and filling.... and healthy too.... take boneless skinless chicken breasts, cutlets.... coat them in beaten eggs ( amount depends on how many cutlets you are making, I usually start off with 2 then add more if needed, better than wasting the leftover) then coat them in the Italian seasoned Progresso bread crumbs... coat a large pan with EVOO (extra virgin olive oil) and fry thuroughly... but don't just pour the oil in... just to coat the pan then add more as needed. You don't want them too greasy... when cooked, pat with paper towels to take of excess greases if any.... now take a can of campbell's condensed cream of mushroom soup, cook as directed in a medium saucepan.... in another pot cook uncle ben's white rice(or any brand) as directed on box... servings depend on how many people are eating... last component, frozen veggies, whichever you prefer... cook them.... now take the chicken cutlets, smother them in the mushroom soup... plate the rice and veggies, then plate the chicken cutlets and spoon some of the soup over the rice.... I'm tellin you its really yummy :).... I used to make it all the time and my ex lost 2 notches in his belt... the good thing is you don't have to skimp on flavor :)... if he doesn't like mushrooms, you can sub it with the condensed cheesy broccoli soup too... mix and match em! they're all good :) hope you like it!

I can help you feed your hubby, With Parmesan Red Pepper Chicken: My Family calls is Mommy's Awesome Chicken. This is really cheep and really yummy.
Ingredients are
Chicken Breasts (thick or thin up to you), Shake Cheese (Parmesan, Romano)
Garlic Powder, Roasted Red Peppers. (in the jar) Extra Virgin Olive Oil And of Course Mozzarella.
Okay take your chicken in a baking pan cover it with the Olive Oil. Completely Coat both sides with Garlic Powder and Shake Cheese. Pour the liquid from the roasted red peppers on top of the chicken as well. Allow to cook for about 10-15 min (depending on the thickness of the chicken) Afterward cut pieces of Mozzarella cheese and place on top of the chicken , Cut your Roasted Red Pepper and Place on top of the Mozzarella. Shake Cheese, Garlic (salt and pepper if you please) and shred a bit of mozz for the top....
Bake together until chicken is not pink and the mozzarella is melted (hopefully not fully melted off of the chicken in order to keep the moss on top of the chicken cut in big chunks).
Now the topper is the leftovers after you remove the chicken.
Take your favorite pasta and toss it with the oil and cheese drippings.

American Chop Suey with ground chicken. You brown your ground chicken in olive oil, then you add 3 cheese pasta sauce, or alfredo sauce etc. make some elbow pasta and mix all together! MMMMM yummy!

Open a can of Campbells celery soup and pour it over uncooked chicken breast,chicken loin, whatever is easy for you. Pop it in the over for about 1hour in a 325degree oven.
You can buy a slow cooker and make chicken stew with vegetables if you are a working mom.

I feel your pain with a picky eater. This is a chicken recipe that my family all enjoys. I serve it with noodles, mashed potatoes or rice. I also have a collection of Pampered Chef recipes where you cook a large amount of chicken and then divide it for different freezable meals. Chicken Broccoli Bake
1 lb boneless skinless chicken breasts
1 slices American cheese
1 can cream of mushroom soup + ½ can water
1 cup cheddar cheese, shredded
1 teaspoon lemon juice
1 large bunch broccoli (about 3 cups)
Salt and Pepper to taste

Preheat oven to 375F. Place seasoned chicken breast (cut into 4 single serving pieces) into lightly greased casserole dish (I use a 9-in Baker). Top each piece of chicken with ½ piece of American cheese.

In a large bowl, mix soup, water, cheddar cheese, lemon juice and broccoli. Pour over chicken. Cover and bake 45 minutes. Serve with rice or mashed potatoes.

Here is a recipe my family loves.
2lbs. boneless,skinless chicken breasts or chicken thighs
3/4 cup packed brown sugar
3/4 cup yellow mustard
1/2 cup cider vinegar
1/4 cup cayenne pepper sauce ( or any hot sauce you have)
2 tbls veg oil
2 tbls worcestershire sauce
1/2 tsp salt
1/4 tsp pepper

Now I tweak the recipe and kinda add as much of the hot sauce or worcestshire sauce depending on how hot and spicy I want it.
Mix all ingredients in a covered bowl add chicken and marinate overnight (best way) or 2-4 hours. You can either bbq it or bake it. i bake it at 350- 375 for 1and 1/2 hours depending on thickness of chicken. I check with a meat thermometer.

In my home we serve this with homemade potato salad and a green salad.

check out cooks.com will he only eat chicken breast or other cuts too? u can roast a whole chicken...tons of different ways to do that and its very cost effective...use leftovers and carcus, make soups, chicken salad, chicken pot pie, chicken ceasar wraps, or any chicken wrap...we add sugar snap peas, cucumber(my hibs loves them and its sooo easy) serve with veg and dip....grilled chicken is good too sliced over a salad, chicken burgers, chicken nachos, chicken quesadillas, chicken on pizza (kids will love that too)...chicken salad melts(just like tuna melts), chicken gumbo, chicken alfredo, chicken pot pie, chicken stir fry...OMY! im so hungry! lol ...oh and a wied one and kinda bad for u, but tastes good is pickel chicken- use that pickle juice thats leftover in the jar and marinade butterlied chicken brest in it for about 20 min (no more than an hour-the acidity in juice will start to 'cook' the chicken and it will not cook nicely). take em out do ur simple flour and egg type breading X2 for extra crispiness...and fry em up or bake if u prefer. ALSO a not so secret family recipe i have is 'sicamore chicken' all u need is drumsticks...egg wash and coat in crushed rippled chips (or any flavor u like even) and bake as usual. nice treat they can be super greasy but its so crunchy and delicious! good luck!

my family love my chicken kiev u put a little poket in the chicken brest and put sum garlic butter in then prepare sum bread crum and betten egg usuly 2 eggs and sum flower u put the chicken in flour 1st then the egg then the bread crumbs both side then u fry it for 1 min on each side 2 seal thr chiken then put in the oven 4 bout 25 till 30 min and serve with boild pototo or what u like 2 have with chicken remember it chiken brest my family love it good luck hope awe goes well xo

If you eat pork or any type of sausage, I may have a good dish that you all could enjoy. I take chicken cutlets and cute them into cubes and simply brown them with a little olive oil, salt & pepper. Brown cut up sausage in a separate pan with a little oil as well. Cut up all different kinds if peppers (which ever you like) and some potatoes. I like the little red ones whole if cut up some bigger potatoes into smaller pieces. Take the chicken, sausage, peppers & potatoes add some olive oil and toss if all together in a baking pan and throw it in the oven. It is done when the potatoes and peppers are soft to your liking. You can omit the sausage if your hubby won't pick it out. This is great, easy dish alone. Sometimes I omit the potatoes and put it over some pasta (with grated parm cheese). I love this dish because I can brown the chicken & sausage, cut up the veggies & refrigerate until I am ready to put it in the oven. Sometime I will do this all the night before. Hope this helps...
