In need of EASY and healthy recipes!!!!

Hi all, I'm in need of some easy (like 5 ingredients at the most if possible...) and healthy recipes, as long as they don't TASTE like they're diet food, hubby will eat with me lol!

He doesn't eat alot of fish or pork and I'm not a huge lamb fan but beef and chicken are ok!

Chicken and Rice

1 package Uncle Ben season rice mix (any flavor)
1 cup regular long grain white rice
4 1/3 cup water
1 can cream of mushroom
½ tsp of seasoned salt
4 cups uncooked skinless boneless chicken breast cut into bite size pieces

Mix all ingredients together in 9x13 inch baking dish and add chicken. Cover with foil and back at 375 degrees for 40 minutes. Uncover, stir and cook for an additional 20 minutes.
Serves 6-8

Black-Eyed Pea Casserole
1 package (6 ounce) long grain and wild rice mix or any flavor
1 pound ground beef or turkey
1 medium onion
2 cans (15 ½ ounces each) black-eyed peas, rinsed and drained
1 can (10 3/4 ounce) cream of mushroom soup
2/3 cups of shredded cheddar cheese
Cook rice according to directions. Meanwhile, cook ground beef or turkey and onion over medium heat. Drain. In large bowl combine peas, soup, rice and meat mixture. Transfer to a greased 2 1/2 quart baking dish. Cover and bake at 350 degrees for 20-25 minutes. Uncover, sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.

Garlic Chicken with Sweet Potatoes

Makes: 4 to 6 servings
Prep: 25 minutes
Roast: 1 1/2 hours

Ingredients
3 heads garlic
2 tablespoons olive oil
1 1/2 tablespoons snipped fresh rosemary
1 teaspoon ground black pepper
1/2 teaspoon salt
1 3- to 3 1/2-pound whole roasting chicken
3 medium sweet potatoes (1 1/2 to 1 3/4 pounds), peeled and cut into 1-inch pieces
1 large sweet onion (such as Vidalia, Maui, or Walla Walla), cut into wedges
Directions
Preheat oven to 375° F. Separate the cloves of garlic (you should have about 30 cloves) and peel. Mince four of the cloves. Set aside remaining garlic cloves.

In a small bowl, combine minced garlic with 1 tablespoon of the olive oil, 1 tablespoon of the rosemary, the ground black pepper, and 1/4 teaspoon of the salt. Rub minced garlic mixture over chicken.

Place six of the garlic cloves into the cavity of the chicken. Tie legs to tail. Twist wing tips under back. Place on a rack in a shallow roasting pan. Insert oven-going meat thermometer into center of an inside thigh muscle. Do not allow thermometer tip to touch bone. Roast, uncovered, for 1 1/2 to 1 3/4 hours or until drumsticks move easily in their sockets and meat thermometer registers 180°F.

Meanwhile, place sweet potatoes, onion wedges, remaining garlic cloves, 1/2 tablespoon of the rosemary, and 1/4 teaspoon of the salt in a 1392-inch baking pan. Drizzle vegetable mixture with remaining 1 tablespoon olive oil; toss to coat. Place in oven on a separate rack and roast, uncovered, for 50 to 60 minutes or until tender, stirring every 15 minutes.

Remove chicken from oven. Cover loosely with foil and let stand 15 minutes before carving. Serve chicken with vegetables. Carve chicken,discarding skin before serving.




Turkey Stroganoff

Makes: 4 (1 cup turkey mixture and about 1/2 cup cooked noodles) servings

4 ounces dried whole wheat or plain noodles
1 8-ounce carton light dairy sour cream
2 tablespoons all-purpose flour
1 tablespoon olive or canola oil
1 pound turkey breast tenderloin, cut into bite-size slices
8 ounces sliced fresh mushrooms
2 cups fresh broccoli florets
1-1/2 cups reduced-sodium chicken broth
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
Directions
Cook noodles according to package directions. Drain; keep warm. In a small bowl stir together sour cream and flour; set aside.

Meanwhile, in a large skillet heat oil over medium-high heat. Add turkey. Cook and stir for 4 to 5 minutes or until browned and no longer pink inside. Remove from skillet. Add mushrooms to skillet. Cook and stir for 3 minutes. Add broccoli. Cook and stir for 2 minutes more or until mushrooms are browned and tender and broccoli is crisp-tender.

Peppered Steaks with Asiago Cheese



Makes: 4 servings (3 oz cooked meat, 1/4 oz cheese, and 1/4 cup mushroom mixture)

4 beef tenderloin steaks, cut 3/4 inch thick (about 1 pound)

1 teaspoon coarsely ground black pepper

1 tablespoon olive oil

1/4 cup lower sodium beef broth

2 4-ounce packages sliced cremini, shiitake, or portobello mushrooms or one 8-ounce package sliced button mushrooms (about 3 cups)

1 ounce Asiago cheese, shaved

1/4 cup fresh spinach leaves (optional)

Directions

Trim fat from steaks. Rub both sides of steaks with pepper. In a large skillet heat olive oil over medium-high heat. Add steaks; reduce heat to medium. Cook to desired doneness, turning once halfway through cooking time. Allow 7 to 9 minutes for medium rare (145��F) to medium (160��). Transfer steaks to serving platter; keep warm.



Add beef broth to skillet. Cook and stir until bubbly to loosen any browned bits in bottom of skillet. Add mushrooms; simmer, uncovered for 4 minutes. Spoon sauce over steaks to serve. Sprinkle with shaved cheese. If desired, garnish with fresh spinach leaves.



Substitution Tip: Switch out the shaved Asiago cheese for Parmesan cheese in the shaved, shredded, or grated form.

Apple-Glazed Turkey

Ingredients

1 turkey breast tenderloin (about 8 ounces)

1-1/2 teaspoons lemon juice

1-1/2 teaspoons olive oil or cooking oil

1/4 teaspoon seasoned salt

1/4 teaspoon dried sage leaves, crushed

2 cloves garlic, minced

1 tablespoon apple jelly, melted

4 very thin slices lemon

Fresh sage leaves (optional)

Directions

Preheat broiler. Split turkey tenderloin in half horizontally to make two portions, each about 1/2 inch thick. Place turkey on the unheated rack of a broiler pan. In a small bowl, combine lemon juice, oil, seasoned salt, dried sage, and garlic. Brush mixture on both sides of each turkey portion.



Broil turkey 4 to 5 inches from the heat for 5 minutes. Turn turkey; place lemon slices on turkey. Broil for 2 minutes more. Using a clean brush, brush with apple jelly. Broil for 2 to 3 minutes more or until tender and no longer pink (170 degrees F). Slice the turkey. If desired, garnish with fresh sage leaves.

Salmon in foil with mushrooms and some type of zuccinni squash drizzle with olive oil, cook on BBQ. Cook brown or jasmine rice on the side. I know you said he doesn't like fish but this is soooo...easy!

Pasta is always a winner with the little ones, add tuna with some peas & sweetcorn or broccolli, OR instead of the tuna add chicken or ham!
Rice bolied then lightly fryed with an egg is always a good side dish.
Make ur own burgers by mixing mince meat with an egg and some thyme and basil shape and grill, goes really well with home made wedges, chop up a potato into wedges ( u can throw what u want on them, such as black pepper, jerk seasoning, i love paprika on them) just add a lil olive oil first give them an often shake on the oven they should take about45 mins!
Meatballs & spagette
mince meat mixed with raw egg some herbs shape and fry in a little olive oil, SAUCE: tin toms, basil, thyme, onion,pepper chilli's a little sugar blended togther makes a tasty quick and easy sauce!

try this - its simple and quick:
saute 1 onion - diced, add 2 cloves of arlic - chopped - and saute, when onion is transparent - add one bunch of chopped spinach and saute. then you can add some chopped mushroom/shrimp/chicken and saute - till half cooked. add 1 cup rice, 2 cups stock/water.
once this boils, cover, and cook on low heat for 15 minutes approx - till done.

Hmm... BBQ sauce has LOTS of sugar, and after my pregnancy with gestational diabetes I'm very careful about sauces, plus my husband is from RSA and BBQ sauce is forbidden, only spices and homemade rubs are allowed! And he hates green beans, peas, corn, cabbage and brussel sprouts!

Grilled chicken, with bbq sauce (my favorite marinade is A-1 Mesquite marinade), boiled potatoes, and green beans. Great meal for the whole family, and easy!
