Super simple, but delicious....
Cube two chicken breasts and brown in about 1 tbsp spoon of oil. I sprinkle the chicken with salt and pepper before putting in the hot pan. Let cook until no longer pink, add your favorite type of tomato sauce. Heat through. Serve over fun shaped pasta.

For a little extra yumminess, cook down some bacon before cooking the chicken, remove the bacon until you add your tomato sauce. Instead of using oil use the bacon grease (I usually drain about 3/4s of it off before cooking, and then the rest after the chicken is done.

Angela,

I am so glad you asked--I'm always looking for different things to do with chicken. This enchilada recipe is acutally one of the few things my picky teen enjoys. I hope it helps.

Ranch Enchiladas
1 16oz container sour cream
1 pkg dry Ranch dressing mix
1-2 cups cheddar cheese, shredded
2 lbs chicken, cooked and shredded
10 flour tortillas

Preheat oven to 400F. Mix ranch, sour cream, chicken and 1-1.5 cups of the cheese. Fill tortillas and place in oven safe pan seem side down. Top with remaining cheese. Cover and bake 20 minutes. Remove foil and bake another 10 minutes.

This is one of those recipes that I truly consider a “guideline”. I’ll use any left over chicken or boiled chicken. The amount of ranch mixture and cheese is completely up to your taste.

Cut chicken into cubes - I like to pan fry with olive oil. Mix in a bowl w/ cream of chicken soup and diced potatoes that are only half way cooked. Put in a baking dish and add Ritz crackers on top and bake for 20 mins. Sooo yummy - you can also add some cheese to the mixture if you would like or substitue cream of mushroom for cream of chicken soup. You could also add any type of veggie you'd want !!

You can do chicken enchiladas and fajitas. Also you can cube it, brown, then add salsa and serve for burritos. One of my hubbies favorites is Italian Chix. I put a lil olive oil in the bottom of a skillet and get it hot. Season your chix with poultry seasoning, salt, pepper, and some chili flakes for a kick. Brown the chicken on both sides, then add some chopped up bell pepper and onion, and a jar of your favorite spaghetti sauce. Then bake at 400 degrees for about 35 minutes. You can serve this over pasta or rice.

here's a few all my family enjoy (and V quick and easy too!)
1. Paprika Chicken - fry thinly sliced chicken breast and thinly sliced green or red peppers with paprika and crushed garlic (to taste) and a pinch (or more) of cayenne pepper. When cooked pour over plain yoghurt to make a sauce with the spices, heat briefly to warm through. Serve with rice. (2) Marinade chicken breasts (sliced lengthways to make thin fillets) in balsamic vinegar and dried (or fresh!) basil; bake for about 20 minutes at around 200C ... basically bake it until it is JUST cooked - chicken should be completely tender and you should still have some juices in the bowl to serve as a 'sauce' so it isn't too dry - my kids love this with instant polenta and steamed carrot sticks.

I use allrecipes.com I found oodles of crock pot ideas and most of the recipes you find you can alter a little to fit your families diets or just to make healthier so don't discount the fried food section. Just about all of it can be baked instead of fried.

Mustard Baked Chicken:
Chicken Breasts
4 tbsp butter melted
4 tbsp mild mustard (I use honey dijon mustard, I always use more than the 4)
2 tbsp lemon juice
1 tbsp brown sugar
1 tsp paprika
salt and pepper

1) Arrange chicken in a single layer in a ovenproof dish.

2) Mix butter, mustard, lemon juice, sugar, and paprika in a bowl and season with salt and pepper. Brush half the mixture over the top of the chicken and bake in preheated oven at 400 degrees for 20 minutes.

3) Remove the dish from the oven, turn the chicken pieces over and cut into smaller pieces and coat the chicken with the remaining mustard mix. Place in the oven and finish cooking.

I serve this over a small pasta shell, it's really delicious and I don't even like mustard!
