2 lbs ex lean beef cubed
3 medium onions diced
10 carrots sliced
12 medium potatoes quartered
2 pints of beef stock
low cal spray oil like frylite
a very large saucepan
Fry the beef pieces for about 10 - 15 mins first of all in a large frying pan that has been sprayed with the low cal spray, then put the beef along with all the juices into the large saucepan on a very low heat, Cover with a lid. Fry the onions and carrots until the onions have stared to caramelise in the frying pan. Add these to the beef. Make up the beef stock by adding 4 oxo or other brand stock cubes to the 2 pints of water and stir in. Finally add the potatoes to the beef, onions and carrots and leave to cook for about 1 1/2 - 2 hours on a gentle heat. Season with salt to your taste. This will make a very hearty Irish stew and is what we call a 'free food' in Slimming World so you can eat as much as you like and lose weight.
