1 cup of finely chopped scallions
2 or 3 (if you like it hot) habanero or sctch bonnet chiles, seeded and minced (wear rubber gloves)
2 tablespoons soy sauce
1 1/2 tablespoons fresh lime juice
2 1/2 teaspoons ground allspice
1 1/2 teaspoons dry mustard
1 bay leaf, center rib discarded and crumbled
3 garlic cloves, chopped
1 1/2 teaspoons salt
1 1/2 teaspoons sugar
1 teaspoon thyme
1 teaspoon cinnamon
2 1/2 to 3 pds. of chicken parts, discard wing tips
vegetable oil, if grilling
To make marinade> in food processor or blender puree all ingredients together.
put chicken parts in a heavy duty resealable plastic bag and spoon marinade over them, coat well. Seal the bag and press out excess air. Let chicken marinate no less than 24 hrs, up to 2 days. turning bags over several times.
On an oiled grill rack set 4 to 6 inches over glowing coals, grill chicken on batches if necessary and covered if possible, for 15 to 30 min on each side or until it is cooked through. You can garnish with additional chiles if desired.
