Anyone out there have a great recipe for King Ranch Chicken casserole ?

I sure do and it is a staple in my home. It is one of my daughters favorites.

1/4 c butter
1 medium onion (diced)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel tomatoes
2 c cooked chicken ( cubed )
12 corn tortillas ( torn into bite sized chunks)
2 c shredded cheese

Melt butter in a large skillet, add onion and saute till tender. Add chicken, soups and rotel. Heat until bubbly. In a 9x13 baking dish, layer sauce, torn tortillas and cheese. Repeat until gone using cheese as the top layer. Bake @ 350 until hot and bubbly and the cheese is melted. Serve with taco toppings eg. shredded lettuce, onions, olives, tomatoes, sour cream etc.
