I am in need of some great meal ideas that I can take the left overs and turn into another great meal. We are not big on leftovers and they just sit in the fridge not being touched.. I hate the amount of food and money that is being wasted. So this past week I made BBQ shredded chicken and the next night with the leftovers I made a BBQ chicken pizza. Two different meals but the same meat. I did this twice and saved about 30 dollars on 4 meals. So does anybody have any meal ideas that turn into something compleaty different the next night?

Any roast (beef, pork, chicken, turkey) becomes a great stir-fry the next night.

Soups are also an inexpensive use for leftovers.

Ham becomes scalloped potatoes and ham the next day.

Boiled potatoes tonight become fried potatoes tomorrow.

Also, to be completely honest, I serve leftover buffet on Thursdays (because I shop on Fridays). They can pick what they want, and lo and behold, it all leaves!!! No more furry blue food!

Leftover beef roast can be made into stew or pot pie. Left over pork can be made into stir fry or fajitas, or simmered in enchiladea sauce then shred it for enchilades.



Leftover chicken or turkey can be made into pot pie, turnover, bbq, with gravy on sandwiches, soup.



The trick is to start with the meat plain, such as a roast, then divide the leftovers into 2 meals, then u can add sauce, soup, bbq. Have it over rice, in a pie shell, on a piiza, in a turnover, in soup.

Robin Miller from the Food Network. She has a few books out. Her basic idea to cooking for the week includes something like this... cooking 4# ground turkey, place 1# in tupperware for a meal later in the week, add stewed tomatoes to other 3#, split 3 ways and place 2 in fridge in tupperware. You now have 3 meals ready in minutes... spaghetti, tacos, sloppy joes, taco/enchillada soup, chilli, goulash, etc. and another in the fridge w/o tomatoes. She uses the same concept for pork, fish, chicken, beef, veggies... there are some unusual sounding recipes. I keep them in a binder and make notes (1-3 stars, add or delete an ingredient, etc.)

Two of our favorites are... slow cooker chipolte chicken thighs and jalapeno honey pan fried pork chops... mmmm!

One word - PIES!

My child has multiple severe food allergies so I need to be very careful what he eats. Whether its left over chicken curry, spagetti bolognaise or pasta carbonara I turn it into a pie. Frozen puff pastry for the family and I use allergy friendly bread or make pastry for a pie crust. If I make them in muffin trays they are ideal for lunch the next day.

I love taco meat for leftovers. One day it's tacos, the next day is a taco salad, or a tex mex sheppards pie. Whole chickens are great, next day I just put it in a wrap with some BBQ sauce. Lasagna is great, it usually tastes better the next day anyway. Pulled pork in a slow cooker is simple and easy, one day eat with mashed potatoes then sandwiches for lunch the next day. Hope that helps a little. :)

Left over macaroni and cheese can be turned into a form of pasta salad. We add lettuce, tomato and various leftover veg (peas and green beans are the most popular) and serve it with a vinaigrette dressing.

And don't forget to make soup with chicken or ham bones. I use leftover ham and the bones along with potatoes and asparagus to make a lovely spring soup.

how about currying the meat it doesnt have to be spicy, korma is not spicy its more creamy than spicy. cook some onions and add some all spice or cinnammon and cayenne pepper about half a teaspoon and mix into the onions add some water and make a kind of paste, add some elmlea single uht cream and it will go thick just add a little bit dont pour it all in add ur left over meat and simmer to taste u can even have it with leftover mash or a couple of cups of rice boild in another pan x enjoy xxxxx

If you have roasted chicken or turkey, you can then boil down the bones and take that meat and turn it into chicken/turkey and dumplings or into a chicken/turkey casserole. If you have had tacos the night before and have leftover taco meat, turn it into a taco salad the next night. Left over roast no problem, shred it down and place on an open roll with brown gravy. There are so many meals that you can turn into something else with great ease. I like to at the end of each week make what I call leftover veggie goulash. Take all the leftover vegetables for that week and some macaroni noodles and tomatoe sauce and pepper and italian spices ( can also add leftover meats as long as they are not over spice laden).

My DH always jokes that we never have leftovers because I always plan my shopping in morphing meals in mind.
Baked chicken or turkey can become a pot pie, cottage pie (great way to use left over mashed potatoes or stuffing for the topping.) tacos or even co co vin.
For roast I like to make chili, impossible pie (with bisquick) , or bbq sandwich, sloppy joe, or hot gravy sandwiches.

Ham can be added to mac and cheese, ham and cheese omelet, ham and potato pancakes. ham and broccoli crapes.baked beans.

With a ham bone you can also use this for the stock home made baked beans, broccoli cheddar soup and cheddar cheese soup with veggies.

Also alway remember casseroles 2 cups of meat, a bag of frozen veggies, can of cream of mushroom or cheese soup. top with crushed Ritz crackers with a bit of malted butter in it. I usually add a bit of Italian spice mix to it or parsley depending on what I am using. You can also top with mash potatoes, or stuffing too.

I love to cook a 3 lb bag of frozen chicken breasts w/ a jar of salsa in the crock pot all day. At the end I add a brick of cream cheese and let it cook for about another 30-60 minutes. Remove some liquid if necessary and stir the whole pot. You end up w/ amazing shredded chicken to use in tacos. The leftovers can be used in salad, sandwiches, wraps, enchiladas, or Mexican lasagna (replace pasta w/ tortillas, marinara w/ salsa). The Mexican lasagna is my favorite. I layer salsa, tortillas, refried or black beans, chicken, cheese and sometimes olives. Repeat layers until pan is full and bake until hot and bubbly.

Leftover pork, steak, chicken or shrimp can be added to onions and peppers for fajitas.

Leftover chicken and rice and be turned into chicken fried rice.

Leftover taco meat can be used for taco salads, enchiladas, etc.

Leftover ham or chicken can be added to pasta, cream of something soup and cheese for a casserole. You can also add it to cooked pasta, veggies, etc. and make a pasta salad as a main course (great on hot summer days).

I use leftover ham and stale bread in egg bake. You add one layer of stale cubed bread to a greased 9x13 pan (cube bread, layer on a cookie sheet and place in oven until dried out if you are using fresh bread). Mix six eggs, one pint fat free half and half, salt, pepper and a few dashes Tobasco. Add cubed ham over the bread cubes, add a layer of shredded cheese (pepper jack is yummy) and pour egg mixture over the whole thing. Let it sit in the fridge overnight or during the day while you are at work. Bake at about 350-375 for 45+ minutes until the eggs appear to be set.

I love to either cook a whole chicken or pick up a rotisserie chicken for dinner one night and then shred the rest of it for the next night and make chicken in rice (boil a bag of yellow rice and a cup or so of frozen mixed veggies and then add the chicken when rice is almost done to heat through). It's a quick one pot meal which is nice as well!

with taco meat, steak, pork loin,chicken they can all be out into a wrap with different dressings or sauces with fresh veggies/ try cooking a pasta with cream or (your choice) and add seasoning with steamed veggies and leftover meat cut up into it. freeze leftovers and defrost on a busy/hectic day where no- seems to be able to make it to the table at the same time and declare left-over night and everyone pick up their favorite meal and eats on the go.

My family does the same thing with our meals
some of our favorites are
meal 1: Sloppy joes
meal 2: Goulash- just add your favorite canned or frozen veggies and some noodles

meal 1 Hot dogs with macaroni and cheese
meal 2 hot dog casserole- mix together hot dogs mac and cheese some minced onion, peas, corn, salt peper, shreaded cheese, and 1teaspoon worchestershire sauce top with crushed ritz crackers and bake at 350 for 20 minutes.

meal 1 Corned beef
meal 2 Ruben Sandwitches- slice corned beef thinly toast rye bread, spread with thousand island dressing,top with sauer kraut, beef, and swiss cheese.

meal 1 Meatloaf
meal 2 Meat loaf sandwitches- slice meat loaf place on bread top with cheese and condiments of your choice.

Meal 1 Baked meat with mashed potatoes and gravy
Meal 2 Leftover Sheppards pie- slice meat to liking, layer meat veggies, gravy and cheese in baking dish top with mashed potatoes and butter

I use left over taco meat for sloppy joes, left over sloppy joses in spaghetti sauce. We are big chicken eaters, I put boneless, skinless chicken in the crock pot with chicken broth for the day. I season it as I use it. Fajitas one night, alfredo the next. Pot roast one night, bbq the next.

With hamburgers you can always crumble the patties and make spaghetti, tacos, nachos, or anything that calls for ground beef...

Chili leftovers, to use for chili dogs or frito pie.
Baked or grilled chicken leftovers, mix with pasta and white sauce.
Here is a recipe for meatballs in the crock pot, the recipe makes enough that I keep out about 30-40 meatballs for another night for spaghetti and meatballs.

Meatball recipe

Ingredients: full (1/2 a recipe)
3 pounds ground turkey (1 ½ pounds)
1/8 c. dried minced onion (2 tbls)
3/4 c. dry bread crumbs (1/3 cup)
1 meatloaf seasoning packet (½ packet)
1 TBLS Montreal steak seasoning (2 tsp)
3 tsp Worcestershire sauce (½ tsp)
½ cup milk (1/4 cup)
2 eggs (1egg)

Sauce:
3 Brown Gravy or Mushroom Gravy Packets - 3 cups total (2 packs)

Combine ground turkey and other ingredients. Make the mixture into small meatballs. Cook meatballs in a large skillet, turning to brown all sides, or bake in the oven until browned, about 20 minutes at 400. Drain meatballs and discard fat. In saucepan combine sauce ingredients. Simmer for 15 minutes. Put meatballs and sauce into slow cooker. Cover and cook on LOW for 3 to 6 hours.
Makes 100 meatballs (50)

with pretty much any meat and potatoes dish you can make shepherds or cottage pie. Take the meat juices and veggies and put them in a casserole dish. Mash the potatoes and cover with cheese. Bake in the oven until warmed through. Note if you think the cheese will get too browned add it the last 10 minutes of baking.

Becky,

I love being able to re-create with leftovers--it makes me feel so accomplished! Fajitas are another dinner that can go into pizza form for a different dinner--use salsa for sauce and Mexican cheese. We also do a lot of wraps, pannini's, and quesadillas with left overs.
