Lite dinner idea's....

I'm due in 2 weeks and I'm relying on my hubby to cook for the couple of weeks after the baby is born. We have 3 other kids at home so it needs to be lite (not only in carbs but easy for my kids to eat). Helppp!!!!

Slow Cooker Beef Stroganoff
This is one of my husbands and my son's favorite dinners.

4 cups beef cubes
1 10.75 oz. can cream of mushroom soup
1 cup sour cream

Place beef in slow cooker. cover with mushroom soup.
Cover. cook on low 8hrs, or high 4-5hrs.

Before serving stir in sour cream. I also like to add some frozen broccoli or peas about a half hour before serving.
Serve over cooked rice or pasta.

Bacon Ranch Chicken
You can make this lite by using low-fat bacon, ranch dressing and cheese.

* 2 tablespoons vegetable oil
* 6 skinless, boneless chicken breast halves
* 1/2 cup teriyaki sauce/marinade (I use less because I think it makes the dish too salty or you could use low sodium)
* 1/2 cup Ranch salad dressing
* 1 cup shredded Cheddar cheese
* 3 green onions, chopped (optional)
* 6 slices bacon, cooked and crumbled
* 1 tablespoon chopped fresh parsley for garnish (I just sprinkle some dried parsley on top for color)

1. Cook bacon, crumble and set aside.
2. Preheat oven to 350 degrees.
3. In a large skillet, heat oil (or use bacon fat) over medium-high heat. Add chicken breasts, and saute 4 to 5 minutes each side, until lightly browned.
4. Place browned chicken breasts in a 9x13 inch baking dish. Brush with teriyaki sauce, then spoon on salad dressing. Sprinkle with cheese, green onions and bacon.
5. Bake for 25 to 35 minutes, or until chicken is no longer pink and juices run clear. Garnish with parsley and serve.

Chicken casserole-1xonion,chicken breasts,1x can tomatoe and onion stew,carrots,potatoes,half a packet of brown onion soup.
Fry onion-and chuck all the other ingredients in-40min max with a stir every now and then;)

My husband's recipes are macaroni and cheese casserole and meatloaf.

Some great options for easy family meals are roast beef or roast chicken. My girls love these and it is so easy, just throw it all in the oven and you are good to go!

Eggs and bacon
Ham sandwiches
croque monsieur: (open faced ham & cheese in the oven; tomato optional)
Tuna melt
cheese & bacon sandwiches (1 slice of bread, 1 slice processed cheese, raw bacon pieces - put it in the oven for 10 minutes)

Dunno if your kids would go for this, but I make a mock cabbage roll dish using ground meat (pork, chicken, beef), a bag of shredded cabbage and 1-2 cans tomato soup.
