I always like those egg & sausage casseroles when I go to brunches, but I've never made one. Does anyone have a recipe they like?

My husband is allergic to wheat and dairy - I have oat flour that substitutes well for regular ap flour in most cases, and use rice "milk" in place of milk for pancakes and the like, but I don't have a substitute for cheese.

I make on the weekends different versions depending what is in the refrig:)

2 eggs per person wisk with salt and pepper

1 chopped onion

1 chopped pepper

tomoto chopped

ham, sausage, bacon (what ever you have)

mix together with your rice milk

add to a pie plate and bake until firm. I also add turkey pepperoni. You can top with salsa instead of cheese to make it full of flavor:)

I make that for work when we have a breakfast event and everyone loves it!!!

Christmas Morning Casserole

2 tubes refrig crescent rolls

2 Table spoons of butter

1 small onion chopped

1 green peper chopper

1/2 cup of mushrooms

8 eggs (I would use more)

1 package sausage links

2 cups shredded cheddar cheese

Preheat oven according to crescent rolls directions. Press crescent rolls into 9x12 pan. Pressing halfway up sides. Melt butter in saucepan, saute onion and green peper and mushrooms. Remove from sauce pan and set aside, in same pan scramble the eggs. Meanwhile, in seperate pan brown the sausage links. Cool and cut into small peices. Layer eggs, mushroom mix, sausage and cheese on top of crescent rolls. Bake as directed on creacent roll package. or until done.

I hope this recipie works. I loved this one. I might suggest adding two more eggs then the recipie calls for.
