Seems like I make the same things over and over again with ground beef. I would like some new ideas to make it a bit more exciting to have for dinner!! I do meatloaf, or meatballs, or chili it seems like all the time. I'm in a hamburger rut!!!

I fix ground beef with Spaghetti sauce and mix different types of noodles with it.
It seems different to the children if I change the noodles.
I also fix hamburger patties and put brown gravy over them and serve it with mashed potatoes.

There are 2 ways of doing this, it just depends on how you'd prefer your potatoes :) if you'd like them more mushy do the first, for more solid, ive put the secret lol...
(mushy version, makes for about 2-3)-- dice and boil 4 potatoes, cook till theyre nice and soft. in the mean time, brown a lb of ground beef. once theyre both done, add the potatoes and a small can of tomato sauce. you can sprinkle some oregano to taste. let cook for about 5 more mins with lid.
for a solid version of potatoes, dice the potatoes and put them with the browned beef and tomato sauce and about 3/4 a cup of water and cover on med-low. let them cook till potatoes are done.

I take a box of Velveeta shells and cheese (follow directions on box to prepare) add ground beef that has been browned and a can or two of diced tomatoes plus some cumin to taste. It's a hit at our house and a quick fix for a school night dinner.

I just found this old recipe book from Family Circle published in 1965 at a Thrift Store today, and it is "Great Ground Beef Recipes".

I was thumbing through it waiting for the page to load when I saw your post. So here's one that sounds interesting.

Jiffy Beef Dumplings

Bake at 375' for 20 minutes. Makes 8 dumplings.

1 pound ground beef
1/2 cup catsup
2 Tbls pickle relish
1 tsp dry mustard
1 tsp salt
1/8 tsp pepper
1 Tbls salad oil
1/2 package pie crust mix
1 can (about 11 oz) meatless spaghetti sauce

1. Mix ground beef lightly with catsup, pickle relish, mustard, salt and pepper, until well-blended; shape into 8 balls. Brown in salad oil. (I believe they mean vegetable oil)

2. Prepare pie crust mix. . . or prepared pie crust now days
Roll out to a rectangle 10x10; trim edges even, then cut into 8 squares.

3. Placed a browned meatball on each square; fold pastry up and around meat balls; moisten edges then pinch to seal. Place dumplings, in a shallow baking pan, making sure they aren't touching each other.

4. Bake in moderate over 375' for 20 minutes, or until golden-brown.

5. Heat spaghetti sauce to boiling; spoon over hot dumplings and serve.

Porkypine meatballs..They are great. and easy. .my 7 year old stepson loves them.
you need...
1 box beef rice-a-roni (can use chicken, rice pilaf or fried rice)
lb. ground beef ( or venison if you use that)
1 egg
mix the seasoning for rice with the water it calls for on the box..
mix rice, burger, and egg together... add a little of the season mixture.. not too much or it will be runny
make into patties or meatballs and brown on both sides.
When browned add the remaining season mixture to the pan and simmer for about 20-30 mins or until cooked. ( not pink in the middle)... we dip ours in ketchup..
