I really like to make a standard homemade mac and cheese, with onion & black pepper, then put it in an oven dish, cover with mashed potato then cheese & sliced tomatoes .. and grill until the cheese is crispy! :D

We use Alton Browns Homemade Mac and Cheese Recipe

http://www.goodeatsfanpage.com/GEFP/inde... Episode "use your noodle II".

I changed the recipe just a little because I saw on a different Foodnetwork show that they used Gruyere cheese instead of cheddar, and added prosciutto, and won awards doing this. It turned out GREAT! I highly recommend it. :D

cook any type of pasta (elbows, rotini, etc.) according to directions, drain water, add ranch dressing til creamy and add shredded cheese (whichever flavor you prefer) and stir til cheese is melted. you can also add cooked chicken or tuna for a whole meal.

I do have a lovely Home Made Mac and Cheese Recipe that is wonderful and easy to make - 1 packet of macaroni cooked. Fried Bacon and Grated Cheese mixed with the Macaroni. Then combine milk and two eggs (you can also combine the milk with cream - to give it a smoother taste). Mix it in with Macaroni and put it into the oven to bake until it combines and cheese has melted.

Homemade mac and cheese recipe-

Ingredients

1/2 pound elbow macaroni

3 tbsp butter

3 tbsp flour

1 tablespoon dried mustard

3 cups milk

1/2 c yellow onion, finely diced (I cheat and use Minced Onion Flakes)

1 bay leaf

1/2 tsp paprika

1 large egg

12 ounces sharp cheddar, shredded

1 teaspoon kosher salt

Fresh black pepper

Topping:

3 tbsp butter

1 c. bread crumbs (I like panko)

Directions

Preheat oven to 350. Cook the macaroni to but not over done. apx 10 to 11 minutes after boil. While the pasta is cooking, in a sauce pot melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.

In a side bowl, crack the egg and then add a spoonful of the milk/butter sauce - this tempers the egg so it won't cook up or curdle instantly when introduced into the sauce. Stir in 3/4 of the cheese. Season with salt and pepper.

Back to our pasta - drain off water and return to pot. Pour cream into the pot and stir by scooping down and bringing what's on bottom to the top - gently so you don't damage the noodles. Pour the mixed up mac to a casserole dish and then top with the rest of the cheese, then bread crumbs. Slice tiny slivers of butter across the top of the crumbs for browning purposes. Bake for 30 minutes and let cool before serving.

Preheat oven to 350o. Cook macaroni according to box. For the cheese sauce I use an even mixture of cream cheese, sour cream, american slices, shredded sharp cheddar, and a little parmesan. Melt about a tbs. of butter in a saucepan on medium-high heat. Add two to three tbs. of cream cheese. Let the cream cheese melt almost completely, then add up to 8 slices of american cheese. Stir until almost melted. Stir in a 1 to 1 1/2 cups of the shredded sharp cheddar. you can now turn it down to med heat. Stir until almost melted, add about a 1/4 cup of milk and two tbs. of sour cream. Let the cheese sauce warm back up then add a tbs. of parmesan and some pepper to taste. It is important to stir until done. Add the mixture into the macaroni just like you do with box mac and cheese.Stir. Pour half of the mixture into a casserole dish. Sprinkle with shredded sharp cheddar. Then add the remaining mixture and top with shredded cheese. Bake in the preheated oven for about 10 to 15 min. until top cheese is melted or toasted whatever your preference. This is delicious mac and cheese it wins over any guest!! I was tired of box mac and cheese and just started adding things to it presto!!

You can even slice in some tomato and boiled eggs.

1 1/2 T butter

1T flour

2C milk (warmed)

pinch of dry mustard, pinch of nutmeg, pinch of white pepper

3 C shredded cheese (kids seem to love a combo of sharp cheddar and american, adults seem to love sharp and gouda)

1 12 oz box of pasta (macaroni or other shape, white or whole wheat) - cooked according to package directions.

Melt butter over med-high heat, stir in flour until combined, gradually add milk, whisking while adding, until combined and smooth (if it's too think, add more milk, should be the consistency of gravy, slightly thick). Stir in the spices (mustard, peper and nutmeg). Stir in 1/2 of the cheese till melted. Mix in the cooked pasta. Stir in the rest of the cheese, reserving a bit to sprinkle on the top. Pour pasta and cheese mixture into a 9 x 11 inch pan and top with reserved cheese. Bake at 375 degrees F for about 15-20 minutes. You can then put it under the broiler for 2-3 minutes to brown it on the top. I have also added diced ham and peas to this before baking, to make a meal out of it. You can also use lowfat milk and lowfat cheese to lighten this and of course whole wheat pasta makes it healthier.
