Avocado Chicken Quesadillas
Ingredients
1 tablespoon butter
8 flour tortillas, fajita size
1 cup Colby-Jack cheese
1 cup Pepper-Jack cheese, shredded
2 cups cooked chicken, diced
1 avocado, diced sprinkled with 1 teaspoon garlic salt
2 green onions, diced
Instructions
Heat a griddle or cast iron skillet over medium-high heat until hot. Add a little butter to the griddle and melt. Place one tortilla over melted butter, sprinkle with 1/4 cup Colby-Jack and 1/4 cup Pepper-Jack cheeses, 1/2 cup of chicken, 1/4 of the green onions, and 1/4 of the avocado; top with another tortilla. Cook until browned, using a spatula gently flip over and cook until bottom tortilla is browned. Remove to a cutting board and slice with a sharp knife or pizza cutter into 4 wedges. Repeat with remaining ingredients.
Serve with sour cream, salsa, or spicy ranch dressing.
Yield: 4 quesadillas

Spinach & cheese ravioli with ground turkey and veggies
Boil ravioli, drain and put it back the pot with some oil
Saute ground turkey with some olive oil, salt and pepper, onion powder, garlic powder and Italian spice blend, and set aside
Saute zucchini, summer squash, eggplant, red bell pepper, carrots, and broccoli with garlic (the whole rainbow!)
Mix the whole thing together in the pot you cooked the ravioli in and toss with a little extra olive oil and add some parm cheese (optional), and more spices if you choose
This meal is so easy and you can use rice in place of the ravioli, also, precooked chicken sausage is a quicker option to the ground turkey, too. I like to have mixed together meals like this, I make sure we are eating plenty of veggies that way.

we are having fahitas tonight ...I take a london broil and pierce it totally on both sides and sprinkle it with Badia meat tenderizer ..do both sides but not too heavy ..then sit it in the fridge overnight to tenderize...depending on thickness (mine was 1 3/4" ...so 2 minutes on each side on the grill) ..let it rest ..then slice is at a slant ...it is soooooo delicious and tender ..so tonight I will finish it with pepper , onions ,,and make fahitas ..yummy

How about a quick and easy recipe using a dip mix? Roasted Garlic & Herb olive oil blend dip mix can be mixed with 1 cup of olive oil to make a fantastic shrimp or chicken scampi. It is a favorites among my friends. Gourmet Creations makes them and they are inexpensive.

Creamy Chicken & Pasta
5 Servings
Prep/Total Time: 30 min.
Ingredients
2 cups uncooked penne pasta
2 cups sliced fresh mushrooms
1 cup sliced green onions
2 tablespoons butter
1/2 cup white wine or chicken broth
1 teaspoon minced garlic
1 tablespoon all-purpose flour
1/3 cup water
1 cup heavy whipping cream
2 cups cubed cooked chicken
2 tablespoons capers, drained
1/4 teaspoon salt
1/8 teaspoon pepper
Shredded Parmesan cheese
Directions
1. Cook pasta according to package directions. Meanwhile, in a large skillet, saute mushrooms and onions in butter for 4-5 minutes or until tender. Add wine or broth and garlic. Bring to a boil; cook until liquid is reduced by half, about 5 minutes.
2. Combine flour and water until smooth; gradually add to mushroom mixture. Bring to a boil. Reduce heat; cook and stir for 2 minutes or until thickened. Stir in cream. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through.
3. Drain pasta. Add the pasta, chicken, capers, salt and pepper to cream sauce. Cook for 3-4 minutes or until heated through. Sprinkle with Parmesan cheese. Yield: 5 servings.

Shrimp & Angel Hair Pasta in a Lemon Caper Sauce
Prep Time: 15 minutes
Cook Time: 45 minutes
Servings: 12
Ingredients
¼ cup olive oil
1 lb shrimp, peeled and deveined
1 tsp garlic, chopped
2 Tbsp drained, capers
¼ cup white wine
2 lemons, juiced
1 lemon, thinly sliced
2 cups heavy cream
White pepper to taste
Salt to taste
8 oz angel hair pasta, cooked according to package directions
1 tsp parsley, chopped
Directions
1. HEAT oil in saute pan. Add garlic and capers and cook for 30 seconds. Add wine and lemon juice; cook until reduced by half.
2. ADD shrimp and cook for 2 minutes. Turn. Add cream; cook for 2 minutes or until sauce slightly thickens. Season sauce with salt, white pepper and parsley.
3. ADD hot, drained pasta to sauce, stirring to thoroughly coat pasta. Add lemon slices.
4. TRANSFER to large serving platter, sprinkle with parsley and serve immediately.

Chicken & Ricotta Meatballs in Broth
Prep Time 20 minutes
Total Time 30 minutes
Yield Serves 6
Ingredients
1 pound ground white-meat chicken (you can use ground white-meat turkey instead)
2 cups part-skim ricotta
1/3 cup grated Parmesan
1 large egg
1 1/2 teaspoons coarse salt
Ground nutmeg
8 cups (64 ounces) low-sodium chicken broth
1 lemon, zest peeled off in wide strips, plus lemon slices for serving
3 sprigs fresh thyme
1 bag (6 ounces) baby spinach
Directions
1. In a large bowl, mix chicken with ricotta, Parmesan, egg, salt, and pinch of nutmeg until thoroughly combined. Refrigerate until ready to use.
2. In a large Dutch oven or heavy pot, combine broth, lemon zest, and thyme and bring to a simmer.
3. Using a spring-loaded 1/4-cup ice-cream scoop or two large spoons, drop meatball mixture into broth (you should have about 18 meatballs).
4. Simmer gently until meatballs float and are cooked through, 10 to 12 minutes.
5. Just before serving, add spinach to broth and let wilt; garnish soup with lemon slices.

There is a pasta dish I make with sauteed spanich, yellow squash, zucchini, and muchrooms cooked with penne pasta and a tomato sauce. Its very delicious and healthy!
Thinly slice ur mushrooms, squash, and zucchini.
Chop an onion and garlic.
Use fresh spanich and spaghetti sauce.
Italian season, basil, and parsley.
Sautee ur zucchini, onion, and squash in olive oil. Once veggies get semi soft add muchrooms and season. Mushrooms will began to change color then add spanich. Cover for 2-3min at a time and stir. Once all the veggies r fully cooked add spaghetti sauce. Cook 5 min more storing occasionally.. Add cooked penne and stir. Bake for 20min and top with shredded cheese.

If you really want something different theb what about toad in the hole? Its yorkshire pudding base with sausages in it. typically served with veg and gravy in the UK as part of a roast.
Trying to think of any other typical english family foods.
Oh what about pancake wraps, make pancakes, leave to go cold, fill with anything you like (ie bacon cheese and onion) wrap the pancakes up the cover in a white sauce, sprinkle with cheddar cheese (or any strong ish melting cheese) and place under the grill until golden.
therer are sooo many good english recipes and us Brits only get thought of for the fry up and fish & chips lol.

what about cottage pie (typically english but cheap and yummy) can give you the recipe i use if you want it, there are sooo many variations you can mess around with it though
ummm, roast beed if you have the time
mac & cheese is always yummy and easy
desert, what about baked apples filled with brown sugar and rasins.
rice pudding is easy, not so fast but no work really involved
