I'm sure this topic is here but I am looking for easy healthy meal ideas for my family of 4. I find it hard to have to be the one to plan meals every day and I would love new ideas

Check the backs of soup cans, Campbell's has good stuff, or go on their websites. Online searching is a good way to find stuff, and then you can always change it to your families tastes! :)
Also, stove top stuffing boxes have good quick meal ideas!

we love pasta dishes. this is quick and easy and ingredients you usually always have in the cupboard:

1 packet spaghetti (cook as usual)

sauce: in a bowl, add 6 eggs, 1 tub fresh cream, chopped parsley, salt and pepper, some parmesan cheese(those in the packets work just as well as fresh)

mix this altogether with a fork, set aside

fry a packet chopped bacon in pan. set aside once done

once spagetti cooked,pour off water, return to pot. add bacon, give a mix.return to stove on slow heat

then pour over egg mixture, and with 2 forks toss continuosly, until the egg sets.. and no more liquid.must not be too dry..

serve immediately with green salad and rolls if u like...

really delicious and takes about 30 minutes until ready to eat...

we call it cowboy casserole;
its one can of spaghetti sauce
one package of wheat noodles
a can of black or kidney beans
and one can of chili i prefer 99% fat free from hormel
cook the noodles and add in a large pot all of the ingredients and stir well then sprinkle with cheese of your choice and place in the oven at 325 for 15 mins. cool and serve. its rich in fiber and protein. the kids dont even notice if i throw in corn or shredded carrots!

sausage corn casserole

1 pkg jimmy dean reduced fat sausage
2 cans creamed corn
1/2 green pepper
1/2 sweet onion
2/3 cup milk
1 egg
about 7 slices american cheese
salt and pepper to taste
1 1/2 tubes saltine crackers

in a very large skillet ..basically you just cook your sausage with the onion and green pepper. then you add in the remainder of the ingredients starting with the corn and working your way through the rest. when you have everything combined in your large skillet you pour it in a baking dish and cook at 375 for 30-45 minutes or until golden brown and set up. its super delicious and rich so i usually have a nice salad with it. good luck. its also good for potlucks and things of that nature. ;o)

When I have time I like to make this meat mix.
brown either 2lbs ground chicken or turkey in 1tbsp olive oil. Add 1 chopped onion and 2 chopped garlic. stir and cook. Add 1 chopped green pepper & 1 chopped red. When the meat is cooked and the veges are tender I separate the mix into 4 freezer containers as meal starters. I then use the starters to make:
Tacos: mix starter with 1/2 tbsp chili, 1 tsp. cumin, 1 can drain & rinsed black beans and 1/2 cup frozen corn and heat in microwave. Place on a hard or soft taco and top with salsa, cheese and veges.
Chili: mix starter with 1 tbsp chili, 1 tsp. cumin, 1 can drain & rinsed black beans, 1 can kidney beans, 1/2 cup frozen corn and 1 28 oz can crushed tomatoes. simmer until heated through and beans are tender.
Pasta: mix starter with a jar of spaghetti sauce and heat. Serve over noodles.
Sloppy Joes: mix starter with 2 cans of baked beans, 1/2 cup tomatoe sauce and 1/2 cup BBQ sauce (adjust if too dry) heat and serve over toasted buns, baked potatoes, rices or noodles.
Pizza: spread sauce on a premade pizza crust, top with starter and shredded cheese. Bake.

This is a recipe I got from one of my scrapbooking wk-ends. My family LOVES it (including Quintin, my 2 yr old grandson).

Macaroni & Cheese Italia Serves 4 generously

8 oz elbow or shell macaroni (I used the curly multi colored from Costco
1 (15 1/2 oz) jar of Spaghetti sauce
1 pint cottage cheese
2 cups shredded cheddar cheese (I used the shredded cheese from Costco)

Cook & drain macaroni according to package directions. Combine w/ spaghetti sauce. Place 1/2 in bottom of buttered 2 quart oblong baking dish. Top w/ half the cottage chees & half the shredded cheese. Repeat layers ending w/ remaining shredded cheeses. Bake 350 degrees 45 mins - 1 hr. I used more cheese on final layer & also added browned, seasoned hamburger to the sauce.

DELICIOUS! Serve w/ french bread & salad.

U can also bake in mircro wave if on a time crunch. High for 10 mins, turn half way after 5 mins if u don't have rotating microwave.

I am a fanatic about my weekly menu. I spend over $60 less a week when I plan my meals. I could give you tons of ideas because we seldom eat the same thing twice in a month (unless it is just because we like it). My favorite websites are www.Allrecipes.com and www.Kraft.com. I go on those sites every week and search recipes that are quick, easy, and healthy. I also subscribe to any and all name brand recipe sites. (Betty Crocker, Pillsbury, ect...) I know this doesn't give you specific recipe help but I hope it helps you in the long run! :)

I find that freezing cooked rice or pasta can be a real time saver as all you need to do to heat it up is run it under the hot tap until thawed, then pour boiling water over to heat through...

Also a really tasty (and very popular with my boys) alternative to mashed potatoes is sweet potatoes/carrots/pumpkin/swede pretty much any root veg, a combination of these works really well too, and tastes pretty amazing on top of mince (cottage/sheperd's pie-style).

a real easy meal that I do alot is chicken and rice
I buy chicken breast and ricea ronie chicken flavored I frie the rice then add the water to it in a baking dish then you put the breast on top of the rice and bake on 400 degrees for about 35 minutes sometimes I add corn to it or I'll make greenbeans on the side

If you're in a rush and have these things on hand, they make a healthy and tasty dinner... You may have had something like it... it's make-your-own hamburger helper lol!

Reduced salt cream of mushroom or celery soup
1lb lean ground beef
Any frozen veg you have on hand (broccoli, peas, etc)
Whole wheat pasta

Brown the beef, drain fat. Add soup, and a little milk of you need to.stir in frozen veg and simmer on low for 10 mins, in the meantime cook up the pasta. Drain, return to pot and add sauce. Stir, let stand for 2 mins or so and serve!

For extra veg open a bag of ready to eat salad, wash, open a tim of mandarin orange slices and toss with a handful of nuts for crunch!

One of my kids' favorite meals is green eggs and ham - puree spinach and whisk it in with scrambled eggs (I also season with Nature's Seasoning, it makes eggs delicious!). Just get the pre-cooked ham (low sodium) or center cut or turkey bacon. Blend a mix of frozen and fresh fruit with 1 cup of All Natural Vanilla Yogurt and 1 cup of milk (I use a banana and frozen mixed berry mix, fresh strawberries and blueberries if I have them) in a blender for a smoothie. Add a side of wheat toast for grain.

I spent one week going through recipes while watching my shows at night. I put them in groups of five to plan dinner menus for the weeknights - weekends I left open for eating out or letting my husband grill. I now have accumulated enough recipes to last me 4 months. Every week I buy groceries just for that week and I have all of my dinners planned - it has made my life so much easier. Just purchase a spiral binder so it's easy to change recipes out if some weren't so good. I hope this helps!

This is probably one of my all time favorite recipes. EVERYONE in my family loves it and it's great for company too.

You can replace the escarole with fresh spinach, you can use green or yellow instead of red peppers, you can eliminate the crushed red if people don't like things spicy and for a family of 4, I guarantee you'll have leftovers that can be used as a side dish the next day OR lunches for you and the hubby for a couple of days.

Chicken Chili

Put 6-8 boneless skinless chicken breasts on the bottom of the crockpot. Pour three cans navy beans, or great northern beans and a large jar of picante sauce, I use 24 oz., over chicken. Cook for 8 hours of low. During the last hour of cooking add a large block of monterey cheese, or pepperjack for more spice. Cook until cheese is melted.

My family loves this and it's quick and easy. I also have a recipe for taco soup if your family likes that kind of thing.

I have a supper easy meal. My kids love it. It sounds alittle strange, but it is really good and only takes a few ingredients.



Mommas Homemade Hamburger Helper-

1.5- 2lbs lean hamburger meat ( season with salt, pepper, all spice or garlic)

1 can of cream of mushroom soup

1 box of Mac & Cheese



Cruble seasoned hamburger in skillet. Cook til done, drain fat.

Add one can of cream of mushroom and 3/4 can of milk

Cook mac and cheese as directed on the box.

Mix meat w/ gravy and mac and cheese together. Done!



You can add mixed veggies or broccoli to this if you like. My kids like corn and salad on the side. Sounds a little boring, but whole family loves it!

I have used hillbillyhousewife.com for recipes, I recently subscribed to emealz.com. Hillbillyhousewife.com is a free website and they have all sorts of recipes and other general living tips to help a family stay frugal. emeals.com charges $15 for 3 months of menu's. They actually give you 7 meals and the grocery list to go along with it. I got tired of being the one to plan all of the meals, and eating the same things all the time. We are on week 2 of emealz.com and loving it so far!

try this Day 1: meat ball stew: beat 1eg with 2 slices of whole grain bread softend with water. Add 2 lbx of ground beef, 1 diced onion, salt, pepper, garlic granules (to taste), 2 tbs worcestershire sauce. Knead together until well mixed. Make 2 inch balls. Brown meat balls in a small amount (3 tbs.) oil. Add one large jar of tomato sauce, oregano, bay leaf, and basil. Simmer about 15 minutes. Add whole baby carrots, halved small potatoes, whole baby green beans (or what ever veg. your boys will eat).Cook 30 minutes.
Day 2 - serve remaining meat balls in a rolls with cheese (meat ball subs) with a salad
Day 3 Thin the left over sauce. Add a can of chickpeas or beans and some cooked small noodles (any shape the boys will like). Add more veg. Adjust seasoning. Minestrone soup!

Thank you Meg for your response. Most of my weeks are crazy so plan ahead freezer meal ideas would be great. We are lucky and don't have any food allergies but my 3 and 4 year old boys are picky but getting better and my husband is not a huge fan of chicken.

do you want meals that you can make ahead, freeze and then just pop into the oven or micro (my favorite when Im going to have a really crazy week)- can also do individual servings if everybody is on a different schedule or recipes for quick easy meals. You will need to get yourself a few good cookbooks.I cook from scratch all the time;and it does get kinda hard to come up with ideas on what to make all the time.I like to have variety and try to feed my family healthy meals.One meal that is very easy and the kids love is: I put a beef roast in the crockpot;add some water and seasonings;cook on high for about 3 hrs.- 4 hrs. then add some carrots and potatoes and cook another hour or so. Very simple and tasty! Tomorrow I will be putting chicken breast in the oven;I'll give you the recipe:
6 boneless,skinless chicken breasts
6 slices of cheese
1 can cream of chicken or celery mixed with 1/2 c. milk
1 c. chicken stuffing
1/4 c. butter
Lay chicken breasts in bottom of baking pan.Put cheese slices on top;and pour cream mixture over the top.Then sprinkle with stuffing and put butter slices on top.Bake for 1 1/4 hr. at 350'

I love having quick meals.

You just put this in the crock pot in order then stir up before serving. I have a family of 12 so you will want to cut it in half or maybe less.

3c chicken bullion
10-15 potatoes diced (about an inch or so deep)
1 qt (4 cups) canned pinto beans or other red beans
diced carrots
3-4 Smoked Polish sausage sliced really thin
2 cans cut corn
2 cans cream of celery soup (spread over the top)

If my crock pot isn't full I will add another layer of potatoes or carrots or both before the cream soup.

Cook on High for several hours until the potatoes and carrots are cooked.
