I was desperately searching for a new meatloaf recipe for a awhile, so I went searching online. And I ended up combining two recipes together, but I will give you the basics of how I now make it. It's the best meatloaf I have had now. It's a sweet & spicy mixture.
1lb hamburger
1 egg
1 cup italian bread crumbs (may need more)
The rest of the ingredients I don't really measure....
probably about 2 TBS brown sugar
about 1 TBS mustard
a few TSP of crushed red pepper flakes (however much you prefer, the more you add, the spicier it gets)
1 TBS worchestershire sauce
about 1/4 - 1/2 cup ketchup
mix all ingredients together (in a seperate bowl, mix a 1/2 cup or ketchup & 3-4 TBS of brown sugar) and glaze over the top of the meat loaf

I wasnt taught to measure things when I cook so you have to use your own judgment or to taste .
2 lbs lean ground beef
onion, diced
green pepper diced
oats
2 slices bread, made into crumbs
salt and pepper to taste
1 egg beaten
3/4 cups water
salsa
meat loaf seasoning packet
Mix all together but the salsa. Place into a loaf pan, spread salsa on top and bake uncovered at 400 for an hour. Maybe a little longer depending on your oven.

YOu can add pretty much anything to hamburger meat roll it into a loaf, bake it and call it meatloaf. :)
My mother uses ketchup, 1 egg, (per 2lbs) parmesan, bread crumbs, garlic, (powdered) salt and pepper.
I use different things depending on what I have. I usually have croutons so I crush those up for bread, but I like BBQ sauce instead of ketchup, I also puree some veggies, (bell peppers, onions, etc. and mix those in to.) Just think about the taste of things and go from there.

1 lb hamburger
1 med onion chopped
5 pieces of bread
1 can condensed vegetable soup
salt and pepper to taste
rip up the bread into tiny pieces and soak it in the can of veg soup for 5 min. Add onion and hamburger. mix well. Bake at 350 for 1 hour.
Its super moist from the soup and an awesome way to get veggies into your kid. My daughter loves it.

I added bacon and cheddar cheese to my last meat loaf. I've also put string cheese sticks in the middle of it. Use worchestershire sauce, or BBQ rather than ketchup
