Mexican Casserole (Crock Pot or Bake in Oven)

1.5 to 2 lbs. hamburger and 1 chopped onion (brown together)

1 package frozen tortillas (flour or corn)

2-3 cans enchilada sauce

1 small can of corn (drained)

1 can hot chili beans (do not drain)

2 bags shredded cheese





* If you bake, preheat over to 350 degrees – spray casserole dish with cooking spray; layer ingredients (see below); bake (covered) one hour; uncover and bake an additional 15 minutes



* If you use crock pot, spray inside with cooking spray; layer ingredients; cook on low



• Place one tortilla in dish

• Sprinkle hamburger/onion mixture onto tortilla

• Add some enchilada sauce (.5 can)

• Cover with cheese

• Repeat; place one tortilla on top of cheese

• Pour corn and chili beans onto tortilla, place another tortilla on top of that (you want this layer in the middle of the casserole)

• Repeat layers and end with cheese

my pico de gallo/ 1 tomato,1 green peper,1red peper, 1/2 onion,1limon juice,1 avocado,cilantro leaves,and a pinch of salt,everithing cut into little picces, put everithing together in a boul and eat with watever you like.
