thanks everyone! I love making the cake like yours rhonda! I want something easy for the teacher though to serve! (i always think about the mess!) I love making the cupcakes in the cones too. I found a cute recipe on family fun but my son said they were too 'cute' LOL ended up going with large star cookies frosted red with a small star cookies stuck on top frosted blue! figure the cookie itself is the white!

You could bake a cake in a 9" or 10" X 13" pan, then frost it with a white frosting (or cream cheese flavored frosting) then decorate it like an american flag. Use blue berries for the stars and halved strawberries for the stripes. I've made a cake like this for the 4th of July before and it is really easy.

am canadian so dont know about this holiday you have but ,try taking your cup cake batter and instead of making regular ones ,fill up ice cream cones ,the ones with the flat bottoms and bake the batter in those so when you decorate them the kids think its ice cream

Cara,
On Pillsbury.com there is a recipe for a "Patriotic Cookie Pizza". It is beautiful and a good way to get some fruit in their diet!
