I make a lot of fruit crumbles, with whatever fruit I have on hand. I don't use exact measurements but you can boost the nutrition by adding flax seed or fibre cereal to the oat topping. The general measurements I use is 2 - 2 1/2 cups oats, 1/4 cup ground flax seed, and 1/4 cup ground fibre cereal (1 Cup of cereal = 1/4 cup ground in the magic bullet)
1/4 - 1/2 cup margerine
1/4 - 1/2 cup sugar
1/4 - 1/2 cup flour (whole grain, all purpose - whatever)
I generally use 5 or 6 apples or pears or the equivalent amount of other fruits mixed with some cinnamon and nutmeg and 1 Tbsp corn starch.
Bake at 350 for 30 - 45 minutes.
Big hit every time. I also serve the leftovers for breakfast.

try adding 2 tbl spoons sugar free cool whip to your favorite sugar free jello (not pudding) mix. Just how it is made on the box. Whip it good with a mixer. pour it into cute little bowls or serving cups. Refrigerate for 2 to 4 hours. My daughter is 11 & we made these for afterschool snacks. You can even toss fruit into the cups either the bottom or on top.Your 4 year old can help with all of this.

EASY and lets them try different fruits in natural forms...

Natural vanilla ice cream and fresh or tinned fruit. Always buy tinned fruit in 100% juice and no added sugar. Frozen fruit is great as well, let defrost on counter or speed things up and make a yummy hot fruit sauce... simply add some of the frozen fruit to a small sauce pot, add 1-2 tbsp water and heat on medium till melted, smashing til sauce-like, serve over ice cream!

We always had that for dessert!

Baked apples or pears--cut in half, core, and mix some brown sugar and nuts and raisins together, place in center, and bake at 350 until soft. You can use honey, if you like, as well. You can also leave out any of the nuts or raisins, or change nuts--almonds are good with pears, pecans and walnuts with apples, I've found. Cinnamon, cloves, or cardamom make good additions, you only need a pinch.

One of my favorite is Ricotta pudding. I just slowly add in sugar until it is a bit sweet and add in a Tbl vanilla to two cups ricotta. I also add fruit puree my favorite one is pear. We can't use sugar substitutes (as it gives my husband migraines and me... well tummy troubles), so I'm not sure how those would taste.

Try grilling or pan frying slices of canned pineapple or peaches or pears. Heat up some nutella in the microwave and drizzel over top. You can top with slivered almonds for some crunch or scrunched up cookies!

Have you thought of doing something as simple as a fruit salad. Super easy and you get to use your favorite fruits and even try some new ones. I usually just cut up some apples, peel some oranges (mandarin now that it's Christmas), add some grapes and berries and then put in one new fruit that we haven't had before. For an extra treat, top with whipped cream or vanilla pudding.
