Need a milk-free birthday cake recipe

My lil guys 1st birthday is coming up in June. Unfortunately he has an allergy to all cow/goat milk products. I am going to have to make the birthday cake as it is hard to find a bakery that makes a cake without using milk or butter and that does not over charge for it. I need a recipe for a birthday cake and icing. Preferable a vanilla cake but open to other suggestions.



I have found a few recipes online but was hoping to get one from someone who has actually made one and tasted it!



I was also wondering what brands of milk free alternatives you have found in general for your other baking and cooking needs. Ie; margarine, chocolate, ice cream etc.



I am on a bit of a budget financially as well as a time budget so please keep that in mind when posting your recipes! Thanks so much! It is certainly appreciated!

Hey I have a baby who has the same milk allergy. All we did was use a normal recipe but use 'Pure' a dairy free sunflower oil based margarine as a substitute for normal margarine. It was delicious. For buttercream filling, again just use the dairy free spread and icing sugar. Check out kinnerton chocolate it's milk free (sold in tesco) also there is a soya based, chocolate buttons for sale in the free from range at tesco's!! Hope this helps. Other than that Cakeworks in Bangor are brill for making special cakes for allergies!! Have a special day!!

Try this one!



1 cup sugar

1/4 teaspoon cream of tartar

1 egg white

1/3 cup boiling water

Directions

1 Mix all ingredients together, adding boiling water last.



2 Beat on high for 6-10 minutes until frosting forms peaks.

Thanks Carisa! Looks pretty easy to make and all the ingredients are quite common and can be purchase at my local grocery store! Now what about the icing! lol!

Although i have never tried this myslef, my friend has a daughter who can not have milk products and this is what she makes. I have eaten and enjoyed it! Good Luck













This is a moist, yummy cake perfect for those who can't have milk and/or eggs!

SERVES 6 (change servings and units)



Ingredients

1 cup all-purpose flour

1 cup white sugar

3 tablespoons cocoa

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1/3 cup canola oil (or any vegetable oil)

1 tablespoon white vinegar

1 teaspoon pure vanilla extract

1 cup water

Directions

1 Preheat oven to 350F degrees.



2 Prepare an 8-inch-square cake pan by spraying with non-stick spray like Pam, or greasing.



3 Set aside.



4 In a large mixing bowl, combine all dry ingredients and mix thoroughly.



5 Add all liquid ingredients and combine with whisk just until blended.



6 Pour into prepared pan and bake for 30 minutes or until tester comes out clean.



7 Serve with Fluffy Frosting (recipe #12586 posted separately) or your favourite cake icing.



8 Note: to make a layer cake, you'll need to double this recipe and bake in two pans.
