Barbecue Chicken Sandwiches

3-4 Boneless, Skinless Chicken Breasts or Thighs cooked in the Covered Baker

When done, chop with Salad Choppers.

Add Smoky Barbecue Sauce

Serve on small buns with medium scoop



Cook aprox. 1.5 lbs covered in Deep Covered Baker for 11 minutes. Test for doneness - Thermometer at 165 - 170 degrees. (or you can cut to see if center is no longer pink) Let Cooked Chicken sit for aprox 5-10 minutes. Chop chicken with salad choppers and add BBQ Sauce to chopped chicken. Slice onion with forged knife or mandoline and saute onions in saute pan - they can be served on the side.





To make Smoky Barbecue Sauce

1 cup ketchup

¼ cup firmly packed brown sugar

2 tablespoons Sweet & Smoky Barbecue Rub

2 teaspoons cider vinegar or white vinegar



Mix together in saucepan, bring to boil and simmer for just 1 minute.

I have TONS of recipes I can send you in emails or whatever just ask if you want more. This goes over REALLY well with kids and is SUPER EASY!! If you don't have the pc stuff in the recipe - still easy just use what you have. Serve with veggies, chips, pickle, and you're good to go. You can use store bought bbq to save more time. I like this one and even making the sauce and veggies it still only takes me 20 minutes to get dinner on the table.

I'm about to post an AWESOME recipe by Rachael Ray, but I've got to say that going through a few of her recipe's will make anyone feel like a pro in no time. If I can prepare it in less time than the oven takes to preheat, I don't buy processed/frozen foods. Look for the Greek Shrimp and Feta Penne dish in the posts... let me know how it goes!!!!

Saghetti is an easy one, all you have to do is buy a jar of sauce and heat it up (don't forget to sprinkle with parmesan cheeese). Campbell soup recipes are really easy as well. Go to there website, or peel off the label of the soup and read.



A really easy and healthy, and popular at my house one, is roasted veges. Take your favorite veges in a single layer on a baking sheet, drizzel olive oil over them, salt and pepper, put in 400 degreee oven for 30 min. (crunchier veges will take a little longer) to roast. Do a big batch at a time, then you can use them all week! Grill a chicken breast with salt, pepper, and garlic, then squeeze a lemon over when done, add some roasted veges and voila! Buy a cheese pizza, cover with roasted veges, and voila! Cook some pasta, add veges and parmesan! There are endless ways to use, and all healthy and easy!

an easy meal is sheperds pie. there are a variety of recipes but we just go with the basic one. Brown your meat, you can use ground beef, ground turkey, ground lamb or stew meat. You can cook onions with the meat as well. Boil potatoes (you can use box potatoes if you want but homemade is better) if your making box, just prepare as directed. Or boil cut up potatoes in salted water for about 20 minutes (put the potatoes in the water before it boils so they cook all the way through, then bring to a boil for the 20 minutes). drain and mash. stir in salt to taste, stir in butter and milk or chicken broth. season to taste. In a casserole dish, put meat in bottom, cover with layer of mashed potatoes then top with shredded cheddar cheese, put in oven about 350 for about 10-15 minutes or until cheese is melted. You can also include carrots, corn, peas, etc in your sheperds pie. This takes just a little over 30 minutes but not too much. The kids love it. I usually serve it with corn on the cob or salad. It's simple and yummy.

Hi!  I've found really quick and easy recipes on Kraft.com as well as the Betty Crocker and Campbells websites.  Of course, Rachel Ray on food.com always has 30 minute meals.  An extremely easy recipe that I like to make is pasta, penne or bowties work great.  In a seperate skillet, coat w/olive oli, take a pint of cherry tomatoes, a little salt to break it down and pepper to taste, and sautee until the tomatoes gently burst.  Add minced garlic, and sautee only about a minute or two.  Add cooked pasta, some fresh basil to taste, and a half lb. of cubed mozzerella, toss, cook for a minute or two, and you're done!  You can switch it up however you like, if you wanted to add different veggies like broccoli, olives, eggplant, sundried tomatoes, whatever you like all goes great.  Serve with prewashed bagged salad and some fresh bread, you have a healthy meal.  Hope it helps! :)

The best tip I could give is to pre-cook ground beef and chicken breast, freeze and use in different meals during the week. Buy big packs of each when they are on sale then fry up the beef, drain and freeze in meal size containers (I use ziplocks)...I parboil the chicken (cover in water and bring to a boil, simmer for about 20 minutes, drain, cool, shred and store.

my daughters found the answer to this problem by making sure they dont live more then 15 min drive from me mom :)

I dont know your work scedual ,but you may try as one daughter does she cooks on the weekend one day and then freezes it up for the up coming week ,like spaggettie sauce ,soup and a couple other types of caseroles. It really does make it easy .

Scone based pizza, great for a quick meal for kids and adults alike!



heat oven to 220c / 425f



For Base



8oz(220g) self-raising flour



1tsp salt



2oz(50g) margarine



4 tablespoons milk mixed with 4 tablespoons water



Place flour in a bowl with salt and then rub in butter and once a slight breadcrumb texture mix in the milk and water mixture .  Roll out onto baking tray and top with either a jar of pizza sauce grated se and sliced sausage, veg anything you want really.  Bake for 15 to 20 mins and then ready to eat.



 



Another thing that I have that is great is a slow cooker.  You can put a stew on before leaving for work come home and it is ready.  An electric one that is.

Hi the easiest healthy meal I have ever made is A Chiken Soup?casserole? whatever.



Ingredients:  4 potatoes peeled and cut into quarters,  1 carrot sliced into circles, some shredded cabbage, 1/4 piece pumpkin cubed, 10 brocolli pieces, 10 cauliflower pieces 1 zuccini sliced, and some mixed frozen vegies. 2 cooked chickens removed from bones. 



All I do is bring all the vegies to the boil cook till tender add the chickens cook till hot. Depending on how much water you add you could always add a little cornflour to thicken the water to a gravy texture. My whole family loves it. And they even put the left overs on toast or in brevilles the next day!!! works for me.
