I use rice milk fortified with calcium, frozen fruit, natural sweetener (like agave syrup, or stevia) and rice protein powder. This makes a great smoothie, or you could feeze it in icecube trays if baby is teething.
you could also make pancakes with rice milk and add rice protein powder to it, serve with fruit for a complete meal.

My daughter was lactose intolerant for a year and I used to use delact formula from the chemist to make muffins and other stuff for her you can get goats milk yogurt and cheese these are nice.

my son could.t have dairy for a couple of years when he was a toddler. my sister also has a dairy allergy. our family has gotten pretty good at finding great stuff when it comes to dairy free. shopping at kosher delis and bakeries jewish people cant eat milk with meat so they have alot of food which is like dairy food that doesnt have dairy. they call it parave you can find alot of great stuff in places like that. also for desserts open window bakery has dairy free mostly all their cakes except the one specified as contrains cream. if your baby can have soy my sister substitutes with soy products, for pizza soy motzarella is the way to go. substtuting soy margrine for butter or regular margrine. one thing i used to make for my son was grilled cheese made with veggie cheese processed cheese which contains no dairy. look at health food stores a good one that has alot of great products is noah's fine foods. also just looking up simple vegan recipies may help you out as well.
