I am a volunteer for a non-profit organization - C.A.R.E. (Citizens Against Ruining the Environment of Will County, IL) and we are having a bake sale at our Earth Day event on 5/17 in Lockport. Therefore, I need some help with oatmeal cookie receipes, cookies made from cake mix, etc. Any and all help will be appreciated. Thanks

Hello Marsha, here in australia we have a favourite biscuit or as you say 'cookie'.

they are called ANZAC biscuits and originally they were given to aussie and new zealand soldiers during the war.ANZAC stands for 'australia and new zealand army corps'.........they are very yummy and would be appropriate because you are 'fighting' for a good cause aswell!!!



here goes....1 cup all purpose flour,

2/3 cup sugar,

1 cup rolled oats,

1 cup dessicated coconut,

4 oz butter,

1/4 cup golden syrup,

1/2 teas bicarb of soda...........................

preheat oven to 350 F and line 2 baking trays with baking paper. sift flour into a bowl and add all the rest of the dry ingredients and make a well in the centre of the dry ingredients.

in a small saucepan combine butter and golden syrup and stir and melt over low heat until smooth. dissolve soda in 1 tbls boiling water and then add immediately to the butter mixture, it will foam up...then add all the wet ingredients to the dry ones and mix well. drop level tablespoons full of mixture onto the prepared tray and leave room for them to spread out.(i press mine down slightly with a fork) bake for 20 mins or until just browned. they do harden slightly on standing, cool on wire rack.

makes about 26.



recipe can be multiplied....

hope you enjoy baking these....maybe you could tell people the story about the soldiers.

Perfect Pastries



1 stick butter (room temperature)

1 - 8oz package cream cheese (room temperature)

1 Tbsp sugar

1 tsp vanilla

1 c. flour

Raw sugar for topping

assorted jams (I like apricot and strawberry)



Preheat over to 400. Cream butter and cream cheese in mixer with blade attachment. When blended add sugar vanilla and flour. Mix slowly until blended. Dump out onto plastic wrap, form ball and refrigerate for a couple of hours. With lots of flour on counter roll small half the dough out thin (1/8") then use a post it note to measure out 3" squares. Then put about 1/4 tsp of jam just off center of each square. Fold one corner in over jam just past half way point of square, moisten opposite corner with water and fold over, pressing gently to seal. Continue filling the rest as above. When all are filled brush with either milk or egg wash and sprinkle with raw sugar. Bake on center rack for 15 to 20 minutes until golden brown on top.

Cookies: 18oz pkg cake mix, 1/2c butter, softened, 1 egg, Preheat 350, mix ingredients on low speed, round tablesppon - space 2" apart on ungreased pan bake 9-12min

Oatmeal Raisin Cookies: 1c butter, 1c brown sugar, 1/2c granulated sugar, 2 eggs, 1 teaspoon vanilla, 1.5c flour, 1tspn baking soda, 1tspn cinnamon, 1/2tspn salt, 3c Oats, 1c raisins, Heat 350, mix butter/sugar-beat, add eggs & vanilla-beat, add flour baking soda, cinnamon & salt-mix, stir in oats & raisins- mix well bake 10-12
