Here is a recepie for Pot Roast. & it sooo easy and delicious.
all you need is..
a crock pot
one chuch pot roast
2 cans of cream of mushroom soup
and one package of brown gravy, mccormicks

Just place your meat in the crock pot., heat up your brown gravy packet than pour it into the crock pot and pour your cans of cream of mushroom into the crockpot as well. (Dont worry it is not going to taste like mushrooms). Than put the lid on and let it cook for 4 hours on high, or 8 hours on Low. And your done.

I know what eating on a budget is like...we are a family of four (two teens and us parents) :)
Here are some "tricks" I use to break the boredom:
I use ground turkey sausage instead of ground beef in our spaggetti sause (canned) and use elbow or shells instead of regular pasta...
Do you bake or fry the chicken? We are cutting back on calories but not taste sooo
I take the chicken breasts and cook them in water and chicken broth on top of the stove then I make my own BBQ sause. I take the chicken and cut it up, mix the BBQ sause and pour it over the chicken. You can shred the chicken/BBQ mixture and serve on hamburgher buns with fries...Does your husband like cube steaks? you can chicken fry cube steaks and serve with gravy and mashed potatoes and corn...ever tried shepards pie? you brown and drain ground beef, pour in a half of a can of beef gravy mix well and place into a cascerole dish...spread a small bag of frozen corn then top with a layer of mashed potatoes...bake in oven @ 350 for 45 minutes.

Chicken Caccatorie

4 Pieces of chicken (I use boneless skinless thighs)
Flour to coat chicken
3 Tbsp extra virgin olive oil
1 can diced tomatoes
1 tsp favorite Italian seasoning
1 lb noodles (I use whatever is in the pantry)

Coat the chicken with flour while you heat the oil in skillet. When the oil is hot drop the chicken in the skillet until golden on both sides. Add tomatoes and seasoning.
In a large pot start boiling water. Add noodles and cook till done.
To serve: Place chicken and tomato sauce over noodles, add favorite vegetable side dish.

It's easy and healthy.

Irish Stew
Small Chuck Roast (2 lbs)
1/2 lbs Carrots peeled and sliced
3 stacks Celery cut in 1/2 inch slices
1 small onion diced
6-8 Potatoes peeled and cut in 1/2 inch pieces
2 cans tomatoes diced
1 bay leaf

Put all the ingredients in a crock pot or large pot. Simmer on low for at least 6 hours. (I put this on during breakfast). When ready to eat cut the meat up. It's easy and not expensive. And makes a big pot for leftovers.

another recipe my whole family loves is the tater tot casserole. And you can use the generic tater tots. I fry 1 pound of hamburger, 1/2 chopped onion, salt and pepper to taste, and 1/4 t. chili powder. Drain. Pour in 9" square pan. Top with tater tots until top is covered. Mix 1 can cream of chix soup and 1 can cream of celery soup and pour over top. Top with 4 slices of american cheese or shreaded cheddar. Bake at 375 until cheese lightly browns. Let set 5 min. and spoon out. Kids love it. Husbands do, too. It and a tossed salad make a good meal.

Have a light dessert with a simple recipe. I take a box of Betty Crocker Angelfood Cake Mix, and a can of crushed pineapple, ( the medium sized one). Put in a big bowl and mix ONLY these two ingredients. Pour in an angelfood cake pan and bake like the box says. OR put in a 9X13 pan. Be sure to put parchament paper on the bottom of pans. Remove and cool. Top with cool whip. Light, and the family will go crazy for it. Mine even like it just without the cool whip! Be sure it's a ONE STEP angelfood cake mix tho. It won't work with any of the others.

chop onion and saute with beef and s&p. when the beef is cooked through put in the bottom of a casserole dish. make gravy per instructions on packet and pour over top of beef and onions. then drain and add can of corn. spread out potatoes over top. s&p the top and i put a little sprinkling of paprika. the bake in the oven at 350 for 30 minutes.

Here is an easy Tuna Casserole that we like.
3 cups cooked macaroni
1 (6oz) can tuna, drained
1 can cream of chicken soup
1 cup frozen peas
1 cup shredded cheddar cheese
1 1/2 cups French fried onions

1. Preheat oven to 350 degrees
2. In a 9 X 13 baking dish, combine the macaroni, tuna, and soup. Mix well and then top with cheese. (spray the pan with some cooking spray to help with sticking)
3. ake at 350 degrees for about 25 minutes or until bubbly. Sprinkle with fried onions and bake another 5 minutes.

Desha,

You can check out the everyday recipes that I serve my family at www.chriscookin.webpress.com. And, I just posted this Pampered Chef recipe for someone else--It's super easy and cheap. . .

Beef Enchilada Casserole

1 lb 95% lean ground beef (or a lower %, but drained well)

1 Tbs Southwestern Seasoning Mix (or taco seasoning mix)

1 can (10 oz) enchilada sauce

¾ cup water

½ cup medium thick and chunky salsa

12 (6-in) yellow corn tortillas

¼ cup snipped fresh cilantro

1 cup shredded Colby/Monterey Jack cheese blend, divided

Sour cream (optional)

Combine beef, seasoning mix and salt in 10-inch Skillet; cook over medium-high heat 8-10 minutes or until beef is no longer pink, breaking beef into crumbles using Mix ‘N Chop. Add enchilada sauce, water and salsa to skillet. Bring to a simmer and remove from heat.

As beef mixture cooks, place tortillas in a stack and cut into 1-in pieces using Pizza Cutter. Snip cilantro using Kitchen Shears.

Arrange half of the tortillas evenly over the bottom of the Deep Dish Baker (or any 9in microwavable vessel); top with half of the beef mixture and half of the cheese. Sprinkle 2 tbsp of the cilantro over the cheese. Top with remaining tortillas, beef mixture and cheese. Microwave baker on HIGH 3-5 minutes or until cheese is melted. Garnish with remaining cilantro. Serve with sour cream--if desired.
