New ideas for butternut squash other than soup?

My daughter and I love making butternut squash soup, but we are the only ones that eat it. So we get a little tired of it after awhile. Actually, I think we may enjoy making it more than anything else! I was wondering if anyone had any recipes for butternut squash other than the soup?

Butternut Squash Bake

2 1/2 cups butternut squash, 2 eggs, 1/2 c. brown sugar, 1/2 c. regular sugar, 1/2 t. vanilla, 1/2 t. cinnamon and 1/4 c. orange juice.



Peel dice and cook squash until soft. Drain and mash. Add in ingredients and mix well and put in cassserole. Than cook topping mixture until thick and spread on top of casserole Ingredients for topping are 1/2 c chopped nuts 9walnuts) 1/2 stick margarine, 2 T. cornstarch or flour and 1/2 c brown suger.



Bake 350 degrees for 30 minutes.

I cut it up and cook it in water.. Drain the water off and put on butter, brown sugar and syrup and cook it till the flavors are through and it caramelizes like candied sweet potatoes. Yummy!!!!!! Can be completely done on top of the stove or in the oven.

I made this for dinner last night and it was fantastic!



Baked Shells with Winter Squash



Prep: 10 minutes Total: 50 minutes





This is a grown-up alternative to macaroni and cheese, but even kids might approve.

Ingredients

Serves 6.



Butter, for baking dish

4 tablespoons olive oil

2 large onions, halved and thinly sliced

Coarse salt and ground pepper

2 teaspoons chopped fresh rosemary leaves

1 pound small pasta shells

1 package (12 ounces) frozen winter squash puree, thawed

1 cup grated Parmesan cheese

3 slices crusty baguette, cut into 1/4-inch cubes (1 1/2 cups)

Directions

1.Preheat oven to 400 degrees. Butter a 9-by-13-inch baking dish. Heat 3 tablespoons oil in a large skillet over medium-low heat. Add onions; season with salt and pepper. Cover; cook until onions are soft and release liquid, 15 minutes. Uncover; raise heat to medium. Cook, stirring, until onions are browned, 20 to 25 minutes. Stir in 1 teaspoon rosemary.

2.Meanwhile, cook pasta in large pot of boiling salted water 2 minutes less than package instructions suggest. Drain, reserving 1 1/2 cups cooking water. Return pasta to pot.

3.Stir squash and reserved pasta water into onions; simmer 2 minutes. Toss squash mixture and 1/2 cup Parmesan with pasta. Transfer to prepared dish.

4.Combine bread cubes with remaining Parmesan, rosemary, and oil; season with salt and pepper. Top pasta with bread cubes; bake until golden brown, 10 to 15 minutes.

steam in shell, up side down in pan in oven with water, make a mixure of brown sugar, cinn, nutmeg, and vanilla favoring, to taste, mix mixture with walnuts pour on top of squash , serve hot sould taste like cannied yams but squah, the walnuts make a great added touch, let me know how you liked it. jb

Squash - Mennonite Style:

(This is how my mom used to do it)



slice your squash into 1/4 in (1/2 in) pieces

coat in flour

fry in oil or butter with lots of salt and pepper



I really enjoy a salty squash!

I do something similar. I just cut in half and scoop out the seeds. Put on a cookie sheet skin side down. Sprinkle with a bit of olive oil, salt and pepper. Bake at 400 degrees until tender. Then I scoop out the insides and mix in some butter and brown sugar and put in a dish and put back in the oven if needed to heat through. My kids love it. They HATE veggies of any sort, but they will eat this. it kind of reminds me of the way some eat sweet potatoes.

Cut in half lengthwise, clean out seeds, fill cavity with pork sausage and bake at 350 for 45 mintures to 1 hour (fork tender). The sausage flavors the squash and keeps it from drying out.

You can roast it, either by itself, or cut-up with other vegetables.



To roast alone; cut in half the long way, scoop out the seeds, put face down in a pan and bake at 400 degrees until starting to get soft. Turn it over, butter the surface, sprinkle with brown sugar and cinnamon, and bake another 20 minutes.



To roast with other vegetables: Peel, remove seeds, and cut squash into cubes. Cut sweet potato, apple, and regular potato into cubes. Drizzle with oil, sprinkle with salt and pepper, stir to coat. Roast at 400 degrees until pieces are tender (use a cooking apple, otherwise it will get mushy and fall apart), about 40 minutes.
