Ok, so I'm desperately in need of some new ideas for side dishes......my husband is a real meat and potatoes guy....he likes those instant mashed potatoes with every meal and I'm about to go nuts. I love veggies but the rest of my family doesn't, occassionally we will have a rice dish instead of potatoes but I'd really like something new and fresh......cool is good too since its summer time. Ideas anyone??? Thanks!!

creamy polenta or pasta salad it's still hearty enough for your hubby and you can mix in what you like.

you can always make up the packet potatoe bakes that you can buy in dif flavours and mix with in with your mashed spuds. gives them a different flavour and still taste great

A quick and easy rice dish that my family loves is Brown rice.
Take 3/4 stk butter, melt in pan with one cup long grain white rice.
Stir til rice is white-looking, can add mushrooms too. Add one can Campbell's beef consomme, not broth, stir. cove and let cook til liquid is absorbed.

I found a great recipe called Notatoes, it's a mash substitute using cauliflower. You'll need;



I medium head of cauliflower

75gms of cream cheese

1 clove of garlic

salt and pepper to taste



Steam cauliflower until tender, place in a food processor with the rest of the ingredients and blend till smooth, you can top it with chives or any other herb you like to serve!

I buy a seasoning packet from the grocery store or sometimes I mix up my own with a little olive oil add some cubed potatoes or fresh veggies ( fresh snap beans are a fave! ). Shake it up in a ziplock bag to get everything nice and coated, Since it has been so hot, I put it in some heavy duty tinfoil and grill it! Easy and flavorful!

Hi Mandy, there's about a million ways to do potatoes but yes, a change is nice!
you can try couscous, it is cheap quick and easy and ca be eaten hot or cold so it's really versatile. you could make sweet potatoe fries, pasta, rice, quinoa,

My family loves taco rice. Here is the basic recipe. I usually add canned tomatoes to mine and often use bullion in place of the broth if I don't have broth on hand. Hamburger can be added to make it more of a main dish. I like to top it with cheese and crushed tortilla chips and pop it in the oven for a while before serving it. It just seems to taste better to me.



Ingredients

1 (14.5 ounce) can chicken broth

1 (8 ounce) can tomato sauce

1 (1 ounce) package taco seasoning mix

1 1/2 cups uncooked instant rice

1 (6 ounce) can black olives, drained and chopped

1 cup shredded Cheddar cheese

1 cup sour cream



Directions

In a large pot, bring chicken broth, tomato sauce, and taco seasoning to a boil.

Stir rice into the pot, cover and remove from heat. Let the pot stand, covered, for 5 minutes.

Stir in cheese and olives; mix well. Serve with sour cream.



What about baked beans? There are some pretty easy recipes out there that use canned beans as a base and you add chili sauce, brown sugar, bacon, etc. to them.

Hi Bethanie....first thing that came to mine was a pasta side dish.....coz their your carbs or cos cos......and thats easy to add things to...like bell pepper...peas...carrot...can be eaten cold too.....good luck with the fam :D

You could make a pasta salad out of orzo...which is actually rice shaped pasta. Make mashed sweet potatoes instead. When you DO make mashed potatoes, use fresh potatoes and add in a parsnip or a carrot with the potatoes. You can also mix sweet potatoes and potatoes together. Aside from those carbs, you could try Quinoa (Keen-wah), too. It's actually a seed that cooks up like rice and looks like cous cous. It has a very plain flavor so you can spice it up however you like. It's a "complete" protein so it's also very good for you. Barley and Bulgar Wheat are some other things to try and can be found in a natural foods section or bulk foods section. You can always add in some roasted or grilled veggies in with any of these options.
