Baked Chicken Alfredo

This baked chicken alfredo recipe is really easy to make, and a great way to get kids (and some husbands) to eat some really good vegetables.


1 lb (4-6) boneless, skinless chicken breasts
2 eggs
1-2 cups italian bread crumbs
2 jars alfredo sauce
1 bunch spinach
1 pkg mushrooms, sliced
1 tomato, diced
grated parmesan cheese
4-6 cups small pasta (bowties, macaroni, etc)
olive oil
minced garlic (you can buy this stuff in a jar, and it keeps refrigerated for a long time)

preheat oven to 350
in a large pot, boil water for the pasta

pour bread crumbs into shallow dish
in a bowl, beat eggs until yolks are evenly mixed
dip chicken breast in eggs, then bread crumbs, and place in a glass baking dish
bake for 20-25 minutes, just until the chicken is cooked through

the water should now be boiling, so reduce heat and add the pasta to cook.

while the chicken is baking, heat olive oil and garlic in a medium skillet
add spinach and mushrooms and sautee, adding more spinach and olive oil as needed.

in a saucepan, heat alfredo sauce on medium heat

check the chicken to be sure it is cooked through, then spoon some of the alfredo sauce over the chicken. top with the diced tomatoes and parmesan.
bake for 5 more minutes.

add the sauteed mushrooms and spinach to the remaining sauce.

drain the pasta and mix the pasta and sauce together.

serves 4-6.

(for a fancy presentation, slice the chicken breasts into strips and arrange on top of pasta)
