Peanut Butter Cookies
1 ¼ cups all purpose Flour
¾ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
¼ cup butter ½ stick softened
¼ shortening
½ cup creamy peanut butter
½ cup granulated sugar
½ packed light brown sugar
1 egg
1 2/3 cup (10 ounce package) Peanut butter chips
Heat oven to 375’. Combine flour, baking soda, baking powder, and salt. Beat butter, shortening, peanut butter, sugar, and egg in a large bowl, beat on medium speed mixture until well blended. Gradually add flour mixture, beating well. Stir in peanut butter chips. Shape dough into 1 inch balls. Place 2 inches apart onto ungreased cookie sheet using a number 20 scooper. Using a fork dipped in additional granulated sugar, flatten balls about 1/4 –inch thickness by pressing fork in two directions to form a criss-cross pattern. Bake 8 to 10 minutes or until set. Cool slightly; remove from cookie sheet to wire rack. Cool completely.
