Hi! I have a VERY picky 7 year old... I'm always looking for new recipes for kid-friendly foods that she MIGHT actually like. Something where veggies can be easily hidden would be good because the only veggie i can get her to eat is corn!

Hey Wendy in Martinsville... :)

I have a friend at your local Virginia Cooperative Extension that has lots of healthy, yummy, inexpensive, kid-friendly recipes.

Her name is Sue Mounce and you can reach her at 276-634-4650 from 8 am - 5 pm if she isn't out of the office teaching a cooking class. She is with the Family Nutrition Program and it's her job to know about this stuff!

I sometimes fix a cheesey chicken casarole & they love it. Boil a bag of egg noodles, put in a can of chicken (kinda like tuna) steam a veggie of your choice and put that in there, put in a jar of cheese dip, stir it all up. You can even put a topping on it if you would like and serve it. My kids LOVE it, I like it cuz its fast and easy LOL!!!
