Pumpkin Chocolate Chip Cookies

1 cup Brown Sugar
1/2 cup canola oil
1 cup cooked or canned pumpkin
1 tsp vanilla
1/2 tsp ginger*
1/2 tsp cinnamon
1/4 tsp ground cloves
1 Tbsp cocoa powder
2 cups of flour
1 tsp baking powder
6 ounces (1/2 bag) of chocolate chips

Mix together sugar, pumpkin, oil and vanilla in a large bowl. In a separate bowl, whisk or sift dry ingredients together. Add to the pumpkin mixture and stir together until smooth. Stir in chocolate chips. Drop by spoonfuls onto a greased cookie sheet. Bake at 350 for 12-15 minutes. Makes 3-4 dozen

*Substitute 1 tsp pumpkin pie spice for the ginger, cinnamon and cloves to make this recipe even easier!

I just got some cans of pumpkin yesterday not knowing yet what I was going to do with it...you saved me..thanks!! These sound really yummy...will try this weekend!
