I just realized that i have never really cooked. My husband is usally the one who cooks but he works 2nd shift. I would really love some easy and quick recipes that i could try!! i want to be able to cook my baby meals when he gets to the age when he eats food!

Spaghetti squash! Buy a spaghetti squash from your local supermarket. Put it in the microwave for 15 minutes. Cut it open and using a fork pull out all the "spaghetti" into a bowl. My family likes to add some olive oil, Parmesan cheese, and even sometimes tomato sauce for a dinner meal that tastes like pasta with virtually no carbs and calories but LOADED with fiber!!

pinterest has been an AMAZING resource to me for finding awesome and (usually) very easy recipes. I also like allrecipes.com they have pretty much anything you could want and lots of options for browsing and searching for recipes, I have founds lots of quick and easy recipes on there. You can even search by ingredients you want and don't want which I often use when I have random stuff to use up and am trying to find a way to put it all together.

Place a bag of frozen boneless/skinless chicken breasts and a jar of salsa in the crock pot in the morning (you can also add a packet of taco seasoning for even more flavor) and cook on low all day. In the late afternoon spoon out some of the liquid and toss in a brick of cream cheese. Let it cook for another 30 min to an hour until the cream cheese softens. Stir the whole thing up and it will fall apart. You will have the most amazing chicken for tacos, enchiladas, salads, whatever. I like to roll some of the chicken up in flour tortillas and place them in a pan. Top w/ a can of cream of chicken soup mixed w/ sour cream and a can of chopped green chili peppers and cover the whole thing w/ cheese. Bake until bubbly.



I also like to pick up packs of three racks of pork ribs at Sam's. I take them home, peel off the membrane on the back side (You Tube has several videos on how to do that), season heavily w/ Famous Dave's rib rub, seal in heavy duty foil and bake at 325 for two hours. I then cut the racks into individual ribs and put each rack of ribs in a gallon zip lock bag. We freeze them and when we want ribs I take them out, dump in a jar of Sweet Baby Ray's BBQ sauce so they can marinate while they thaw. We toss them on the grill for a few minutes to heat them up and serve with baked beans, corn muffins w/ honey butter and watermelon or pineapple.



To make an amazing turkey breast just rub the breast with a packet of dry Lipton onion soup mix. Toss it in the crock pot on low all day (no need to add liquid). When you get home it will just sort of fall apart. You will have plenty of juice left in the crock pot to make gravy if that is your thing. You can whip up some smashed potatoes and a veggie or salad for a delish turkey dinner. The leftovers can be used in casseroles, sandwiches, etc.



On the weekend try making some meatballs. You can freeze them and use them in a cream sauce over smashed potatoes, toss them in spaghetti, add sauce to make meatball sandwiches, etc.

Hamburger & Rice casserole is A FAVORITE at our house. I also ran a daycare for 10 years, and this dish was a favorite of every kid!



1 lb ground beef

1/2 cup finely chopped onion

1 can cream of mushroom soup

1 can cream of chicken soup

1 can water

2-3 tbsp soy sauce

1 cup quick cook rice



Brown beef & onion in a skillet till beef is no longer pink

meanwhile, mix soups, water ,soy sauce and rice in a 2 qt casserole dish

mix in drained beef, and bake at 350 for 30 minutes- or until rice is tender. in the last 5minutes of baking, top with rice noodles or fried onions, or crushed butter crackers.....
