To make it easy for you try to make Casserole Like broccoli chicken cheese or Chicken Mozzarella. And freeze it uncooked. then when you need a homemade meal for you and your child just bake it.

My daughter and I love pasta with different sauces-she gets to pick-and some type of meat. She loves it because she gets to choose and help, she's 4. We also like homemade soups-they freeze well, homemade mini pizzas with pre-bought crusts, english muffins or biscuits; we have LOTS!! My husband works second shift, so every weeknight meal is just the two of us. Let me know if you want more ideas and if you have some we may like!

Since the weather is cooling, how about lentil soup with dumplings? My 16-month-old son loves lentils and (if you break them up) the dumplings soak up most of the broth that makes soup so distasteful to toddlers. We make a whole pot and freeze it in two sizes. One size for when my husband is home and one for just the two of us. It microwaves quickly and tastes just as good as fresh. Lentils don't need soaking so the whole thing takes only about an hour or so. Not bad when you consider that you get 4 or 5 meals out of it and the only time you spend cooking on those nights is a couple of minutes in the microwave. Would you like our recipe?
The other thing I do is make a little extra when my husband is home and freeze some of that so that I don't have to cook as often when he is away. Even if I only have a few mouthfuls left of something my son likes, I freeze it for a quick lunch for him. :) It has worked out well for us.

Quesadillas are a fun easy meal. I put veggies and sometimes cooked chicken or mince in with the cheese. My son loves dipping his bites into sour cream and guacamole.
