try "octopus and seaweed." take a hotdog and cut it in half, then roll to other side and do it agian, at the top cut two > shapes pointing downward, those will be eyes and one shortly below, that would be the mouth. then boil them. then take some noodles ( top rommen is perfect for this) and put them in water to boil, while it comes to a boil add green food coloring die to it and that will be your seaweed.

i found that doing themed dinners like this helped a lot with picky-ness.

I'd tell the kid to take it or leave it. Sounds harsh, but I don't put up with 's picky except when they're allergic. It's kind of hard to complain about allergies.
Try making things he can make with you, like peanut butter balls (equallish amounts of honey, peanut butter and dry milk.) If you can grow a garden, he will eat what he grows, particularly if he gets some say in what to grow.

If you see this, leave this form field blank.

Watch your seasonings. Many little children like bland foods. As for the rest of it, I agree with Chaya. Do not make your dinner table a battle ground. My children had simple rules. If they didn't want to eat, they could sit at the table as long as they were behaving appropriately. If they weren't behaving appropriately, they were excused from the table. Then they could have all the water they wanted until the next meal. Trust me, unless there is a medical issue, your child will not die of starvation between one meal and the next.
