A favorite in our house is shepherd's pie. It's great because you can add SOOOOO many different kinds of veggies!
1 LB ground beef, browned, and drained
1 diced onion
1 cup chopped celery
2 cloves minced garlic
1 cup corn niblets/diced red pepper/grated carrot/whatever other veggie you want your kids to not know they're eating! :P
2 can creamed corn
4-6 large potatoes, mashed, and seasoned the way you like. (I personally mash them with some milk, chicken stock, garlic powder, lots of butter, and chives.)
Preheat oven to 350 degrees. Boil peeled, chopped potatoes; drain. Brown beef, onions, and garlic in a large skillet, and drain. Add celery, , or other veggies, and cook until tender crisp. . In 9 by 9 casserole dish, spread your beef mixture along the bottom. Spread creamed corn across the top of the beef mixture, making a second layer. Do the same with the mashed potatoes, taking small bits at a time to avoid creamed corn layer from squishing up into your mashed potato layer. If you'd like, you can spread some grated cheese of any kind across the top before you bake it... it's almost a guarantee that most kids will eat anything with a melted cheese layer on top. Bake at 350 for ten to fifteen minutes. (ten if you cheesed it, fifteen if you didn't) Enjoy!

My boyfriend and kids love what I call hamburger gravy, just brown the burger then make a gravy either from scratch (or the brown gravy from a package) then make some mashed potatoes (ore ida makes some that you throw in the microwave for 10 mins and then mash them just like homemade) and then mix the gravy and burger together and pour over mashed potatoes, serve with a veg and bread and butter and instant quick dinner.

easy ,quick delicious meal
There's one called mexican stew, it's a little different from taco soup:
1lb hamburger meat
1 can rotel (original or mild depending if you want spicy or not)
1 can minestrone soup
1 can (original) ranch styl beans
1 small onion--or half depending on your taste
dice onion and cook with hamburger meat, drain fat, combine all ingredients in a pot and heat through, I fill up the minestrone can with water and add to make it soupy;while the meat is browning I warm up the other ingredients in the pot to cut cooking time; if you want to make a bigger pot just double the ingredients, except for the onion..I usually go to a med size. It's quick and tastes great even as leftovers!

Brown ground beef with small sliced onions (1/3 of onion), add in some onion powder, garlic salt and celery salt.
Cook corn on another burner (can or frozen).
Boil any type of pasta until al dente.
Once ground beef is all cooked and onions are see through, add in 2 can tomato soup and one can water, one can milk. (can add in a third can of soup if you want, along with can of milk OR water). Then add in more onion powder, garlic salt, celery salt, parsley, oregano, and a touch of basil. Bring to a boil.
Then combine all ingredients and mix well. You can add in some shredded cheese at this point, and serve :)

Here's a great recipe from The Pampered Chef. . .
Beef Enchilada Casserole
1 lb 95% lean ground beef
1 Tbs Southwestern Seasoning Mix--can do without
¼ Tsp salt
1 can (10 oz) enchilada sauce
¾ cup water
½ cup medium thick and chunky salsa
12 (6-in) yellow corn tortillas
¼ cup snipped fresh cilantro
1 cup shredded Colby/Monterey Jack cheese blend, divided
Sour cream (optional)
Combine beef, seasoning mix and salt in 10-inch Skillet; cook over medium-high heat 8-10 minutes or until beef is no longer pink, breaking beef into crumbles using Mix ‘N Chop. Add enchilada sauce, water and salsa to skillet. Bring to a simmer and remove from heat.
As beef mixture cooks, place tortillas in a stack and cut into 1-in pieces using Pizza Cutter. Snip cilantro using Kitchen Shears.
Arrange half of the tortillas evenly over the bottom of the Deep Dish Baker (or any microwavable casserole dish); top with half of the beef mixture and half of the cheese. Sprinkle 2 tbsp of the cilantro over the cheese. Top with remaining tortillas, beef mixture and cheese. Microwave baker on HIGH 3-5 minutes or until cheese is melted. Garnish with remaining cilantro. Serve with sour cream--if desired.

Fry up some hamburger, drain the grease, add about a cup of milk, then cut up some velvetta cheese and add. Then while on stove, stir until cheese is melted. It is really delicious. and easy, my mom used to make it for us kids when we were at home. Also you can add some pasta. let the pasta come to a boil, drain and add to the hamburger and cheese

I make what my family calls Conchas. Conchas mean shells in Spanish. It's ground beef, pasta shells( not the big ones you stuff) 1 can tomato sauce and bouillon cubes. It's my version of hambuger helper.
First, you brown the shells in a littlebrings bit of oil. This brings out the nutty flavor in the pasta. Be careful not to burn them. Set those aside. season and brown your meat. Add the shells back, add the tomato sauce and water and bouillion cubes to cover the shells season to taste bring to a boil and lower heat to simmer on low covered for about 15mins. You can make it as soupy as you like by adding more water to eat. I sometimes add a small diced onion to the shells when browning. Hope this helps, it really is a quick meal.
