Festive Tuna Casserole
16 oz extra wide noodles, two small cans tuna, 4 oz jar pimientos, one can cream of mushroom soup, skim milk (fill empty soup can, I always add a little more than that), one small white onion, frozen peas (as much or as little as you want, I usually do half a bag), shredded mild cheddar cheese, parmesan, olive oil. Cook pasta. While cooking add all other ingredients (except last 3) in 9x13 glass dish (or 2 small 8 in square) and preheat oven 350 degrees. Add cooked pasta and mix together. Top with cheddar cheese (I usually do at least 2 cups), then top with parmesan (I use canned). Drizzle olive oil over the top and bake for 30-35 minutes. Freezes really well too.
