I have an idea of how to make it, but I would love all suggestions please. Feeding 5-6 people and have either 2-4 lbs. of beef & lots of instant potatoes!

Brown 2 lbs hamburger with a chopped onion. Mix with two cups of brown gravy, and a bag of frozen country style veggies (corn, beans, carrots). Sprinkle 1 cup of shredded cheese your choice on top. Finish off with your mashed potatoes and bake at350 degress for about 20-30 minutes, or until heated through. If you need quicker time cook the veggies while browning the hamburger.

My mom always made it similarly to the first responder's mother-in-law, except my mom used cream of mushroom soup instead of tomato. So it would be browned ground beef mixed with green beans and cream of mushroom soup, with a layer of mashed potatoes on top. It's not the traditional shepherd's/cottage pie, but I think it's homey and comforting and delicious!

Shepherds pie is traditionally made with Lamb mince, Cottage pie is beef mince, add diced onion, carrots, crumble in a beef stock cube, brown mince in a little oil, with the veg add water and simmer for 25 minutes or so at a low simmer, adding a little tomato paste is nice, thicken with a bit of gravy mix. Leave to cool, I have no idea how instant mash works you do that bit, top with a sprinkle of finely grated cheddar, heat through in the oven and crisp the top up under the grill. Then Bob's your uncle cottage pie.

I cook hamburger drain off the grease then add a jar of beef gravy layer corn, potatoes, & shredded cheese on top. If I have mushrooms or onions I cook them with the meat.
My husband likes to use 1-2 cans of cream of mushroom soup and a couple spoons of cream cheese instead of gravy (he cooks it until the cream cheese is all melted/mixed in) & sometimes he puts the meat & corn over toast or rolls.

I make Paula Deans version... We LOVE it! kinda like a pot pie.
* 1 small onion
* 1 1/2 pounds ground beef
* 1 1/2 cups mixed vegetables or niblet corn, prepared
* Salt and freshly ground black pepper
* 8 to 10 medium red new potatoes ***(sub your instant)***
* 1 1/2 cups milk
* 12 tablespoons butter
* 1/2 cup sour cream
* 2 cups instant biscuit mix
Directions
Beef Layer: Saute onions in 2 tablespoons butter. Add ground beef. After beef is browned, add vegetables. Add salt and pepper, to taste.
Potato Layer: Peel and slice potatoes 1/4-inch thick. Cook in boiling water for approximately 15 minutes or until fork-tender. Whip potatoes with electric mixer; mix until moderately smooth. Don't over beat them; a few lumps are nice. Add 1/2 cup heated milk, 1/2 cup butter, and sour cream. Salt and pepper, to taste. Whip until mixed. Adjust thickness by adding more milk, if desired.
Biscuit Layer: Combine biscuit mix and 1 cup milk. The mix should be thinner than normal biscuit mix but not runny.
Preheat oven to 350 degrees F.
Spray a 9 by 9 by 2-inch pan, or any similar casserole dish. Layer half way up with the mashed potatoes. Next, spread a layer of mixed vegetables or niblet corn on top of potatoes. Then add a layer of the meat. Pour biscuit mix over meat. Melt 4 tablespoons of butter and drizzle over top. Bake for approximately 35 to 45 minutes until top is golden brown.
Note: Leftovers make this dish easy to put together. So if you have leftover pork roast or beef roast with gravy and mashed potatoes from Sunday dinner then this is an easy mid- week meal that will take only a few minutes.

My mother-in-law made it this way and it's easy. I use about 1.5lbs beef (you could use however much you like). Brown it in a frying pan, drain grease, and put into a casserole dish. Then mix in 2 cans tomato soup and 2 cans green beans. Add salt and pepper. Make mashed potatoes and spread over the top of beef mixture. Bake at 350 degrees for 1 hour, potatoes should be lightly browned. That's it, quick and easy.
