Simple curries????

I love curries, and the last time i attemped to cook one it was very long winded and didnt come out that great!
Has anyone any decent but no so complicated recipes for curries...i eat all meats and veg! :o)

chicken breasts
minced garlic
1 onion chopped
2 cubed potatoes
1 bell pepper sliced
1 can chicken broth
1 can coconut milk
curry to taste

Saute chicken, garlic, curry powder ( i usually use 2 or 3 spoons) onions and peppers in pan.
When chicken is cooked add liquids and potatoes. Simmer until potatoes are soft, usually a half hour.

You can also switch up the vegetables depending on what you like and can use curry paste if you prefer it over powder. I have also done this recipe but instead of the veggies above I threw in a bag of stirfry vegetables at the end.

This is one of our favorite dinners. Its really quick and easy. I usually serve it over rice

1/4 c. butter
1 apple, peeled, cored, and diced
1/2 c. celery, chopped
1/2 c. chopped onion
1 1/2 tsp. curry powder
2 tbsp. flour
1 3/4 c. milk
1/3 c. seedless raisins
1 1/2 tsp. salt
1 1/2 tsp. lemon or lime juice
2 c. cooked, cubed chicken, beef, or lamb
Hot cooked rice
In medium saucepan, melt butter. Add next 4 ingredients and saute 5 minutes over medium heat. Stir in flour. Gradually add milk, stirring constantly. Add raisins, salt, and lemon or lime juice. Bring mixture to boil, stirring frequently. Add meat; reduce heat and cook 7 to 10 minutes more. Serve over cooked rice. Makes 4 to 5 servings - each with 2/3 cup rice.

Not sure if this is the type of Curry that you are looking for but this is very good.

Orange Curried Chicken

This is great served on a bed of rice. Spoon remaining sauce from pan over the top. Yum!

Ingredients:
* 1 cup orange marmalade
* 1 tablespoon curry powder or more if you want to kick it up a notch
* 1 teaspoon salt
* 1/2 cup water
* 4 bone-in chicken breast halves, with skin

My variations: I use boneless chicken breasts, omit the water and salt, and instead use about 1 tbsp of soy sauce. I reduce baking time to about 30 min.

Directions:
1. Preheat oven to 350 degrees.
2. In a small bowl combine the marmalade, curry powder, salt and water. Mix together. Place chicken pieces, cut side down, in a lightly greased 9x13 inch baking dish and spoon marmalade mixture over chicken.
3. Bake uncovered for 45 minutes, spooning sauce over chicken several times. (Note: If sauce begins to stick to the baking dish, add an additional 1/4 cup water).
4. Remove chicken from baking dish and skim fat off of the sauce. Serve sauce hot with the chicken.
