I just bought a 5-1/2 quart slow cooker. I am new to this. Just made a pot roast last night and now I think I am addicted. Does anyone have any tried and true recipes that they are willing to share??

I just downloaded this slow-cooker recipe from Martha Stewart's web site. It sounds super tasty! I'm definitely gonna give this dish a chance...



TEX-MEX CHICKEN & BEANS



Ingredients:

1 cup dried pinto beans, rinsed

1 jar (11 ounces) mild or medium salsa (1-1/2 cups)

2 tablespoons chopped canned chipotle chiles in adobo sauce

2 tablespoons all-purpose flour

1-1/2 pounds boneless, skinless chicken thighs (about 8)

Coarse salt & ground pepper

1 medium red onion, chopped

1 red bell pepper (ribs & seeds removed), chopped

1/4 cup reduced-fat sour cream, for serving (optional)

1/4 cup chopped fresh cilantro, for serving (optional)



Directions:

1.) in a 5- to 6-quart slow cooker, stir together beans, salsa, chiles, flour, & 1 cup water. Season chicken with salt & pepper; arrange on top of bean mixture. Scatter onion & bell pepper on top of chicken.

2.) Cover & cook on low heat for 8 hours. (Do not open lid or stir.)

3.) Remove chicken from stew; shred into large pieces & return to stew.

4.) Ladle into bowls; serve topped with sour cream & cilantro.**



** I would also recommend topping this stew with shredded Montery Jack cheese &/or diced avocado. M'mm...& don't forget to sop it all up with some warmed flour tortillas!

Here's one that we have for dinner at least once a month, and usually have enough for a second dinner to freeze for a lazy night (even my daughter, who is starting to become picky about veggies, will eat 2 helpings of this):
Vegetarian Chili
1 medium zucchini, halved lengthwise and cut into 1/2 inch slices
1 medium green bell pepper, chopped
1 medium onion, chopped
3 stalks celery, thinly sliced
2-3 teaspoons chili powder
1 teaspoon dry oregano, crushed
1/2 teaspoon round cumin
2 14 oz. cans diced tomatoes
1 10 oz. package frozen corn (we don't love corn, so I usually substitute a can of kidney beans)
1 15 oz. can black beans, rinsed and drained
1 cup bottled salsa (I substitute an extra can of diced tomatoes with green chilis)
Shredded cheese and sour cream or plain yogurt to serve on top
Combine ingredients in 3 1/2 - 5 qt. slow cooker. Cover and cook on low heat for 8-10 hours or high heat for 4-5 hours.

I love the simple stuff =)



Baking potatoes: Wash, pat dry and rub in butter; Layer in crockpot; Cook on Low for 8-10 hours or High for 4 hours. Very moist and soft! Great for potato bar night.



Whole chicken: Clean inside, rinse and pat dry; Place onion slices in cavity; Brush skin with light coating of olive oil; Season with salt and pepper; Place breast-side up in crockpot; Cook on low for 6 hours. Wonderful as a main dish and leftovers are perfect for chicken salad or stew.

coke chicken

3-4 boneless skinless chicken breast

1 can coke classic

1 cup of ketchup

diced onion

just cook all day (sounds like a wierd combo but is delicious)



coke roast

1 roast (any kind will do I always buy whats on sale)

1 can of coke

1 packet french onion soup mix

salt pepper and garlic salt to taste

Just throw a pound of dry pinto or northern or whatever kind of beans and a chunk of ham or smoked sausage. Fill almost full of water and turn it on in the morning.  It's done by dinner. Yummm

Brown Sugar Spice Cake











Prep: 10 minutes
Cook: 2 hours
Serves: 8


 






Ingredients:






Vegetable cooking spray
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup (Regular, Healthy Request® or 25% Less Sodium) 
1/2 cup water
2 eggs
1 box (about 18 ounces) spice cake mix
1 1/4 cups hot water
3/4 cup packed brown sugar
1 teaspoon ground cinnamon
Vanilla ice cream






Directions:








 






 










Spray the inside of a 4-quart slow cooker with the cooking spray.



Combine the soup, water, eggs and cake mix in a medium bowl and mix according to the package directions. Pour the batter into the cooker.



Stir the water, brown sugar and cinnamon in a small bowl. Pour over the batter.



Cover and cook on HIGH for 2 hours or until a knife inserted in the center comes out clean.



Spoon the cake into bowls, spooning the sauce from the bottom of the cooker. Serve warm with the ice cream.

Crockpot – Chicken Drumsticks





3 1/2 pounds chicken drumsticks, skin removed

1/2 cup soy sauce

1/4 cup packed brown sugar

2 cloves garlic, minced

1 (8 ounce) can tomato sauce





Place drumsticks in a slow cooker. In a medium bowl, stir together soy sauce, brown sugar, garlic, and tomato sauce. Pour sauce over chicken.

Cover, and cook on Low heat 8 hours.

I can smell the aroma of pork chops, envelope of Lipton golden onion, can petite diced tomatoes and  pepper, parsley, garlic powder, celery salt. amke some mash potatoes. It's cookoing right now!

pretty much can be done with a slow cooker. Try different things.  Meat, veggies, water, soy sauce, spices, potatoes or rice or both.  Just try different combos and you will amaze yourself.

hello, i do a dish in my slow cooker....

lamb leg chops floured and browned in skillet.

add to the slow cooker along with 2 diced onions, 2 diced carrots and diced celery.

add 2 tbls worcestershire sauce and one packet french onion soup and 3 cups water.

later i also added quarter cup barley to thicken sauce.

really delicious flavour....with so few ingredients.

Homemade Veggie and Meat Soup
brown up 1lb of hamburger with onion and garlic for taste
1 1/2 big cans tomato sauce
1/2 can of water
1 big can veg all
then add various veggies you like
salt, pepper and other seasonings to tast
cook for 6 hrs.
I tend to use the frozen italian mix in mine and some real onion and carrots cut up. You can also use 1 Can of tomato juice instead of the water and tomato sauce.
I also serve mine with cornbread

i do heaps in mine, normal stuff like a spagetti bolognese sauce 550gm mince, 1 small onion diced, two cups of grated or diced veggies carrots zucchini etc, i jar or passata sauce , mixed herbs bit of garlic on low for 6 hours

boneless skinless chicken breast, with a can of cream of mushroom soup, season as you like. very good! make some mashed potatoes and gravy on the side and a veggie, and your good to go. i use my crockpot all the time.....very handy.

Turkey breast with a can of gravy, comes out great we have it with baked sweet potato, and cranberry sauce.



Cut up bite size pork, add a jar of salsa, sliced green peppers, onions cook on low for 6 hours great over rice, beans, or tortillas.
