Crock-Pot Easy mexican chicken
4-6 Chicken breasts
2 cups cooked rice
1 block of cream cheese
1 jar (or less if you don't like spicy) of salsa
1 can corn (drained)
1 bag tortilla chips
Cut up the chicken breast into 4 quarters (it will fall apart while cooking it). Add chicken, cooked rice, cream cheese, salsa, and corn into a crock pot. Cook on high until chicken is falling apart (or low, it will just take longer). Serve hot over tortilla chips!
***It usually takes me from 10am to 4pm to cook this. I put it on HIGH for 3 hours, then turn to low and cook a little longer!***

I make this dish alot and my kids really love it. Just take a bag of baby carrots, throw that in the slow cooker on the bottom, 1 can of cream of chicken soup, pour that in(no water), then put 4 boneless skinless chicken breasts on top, sprinkle with rosemary and basil and cook on low for 8-10 hrs or high 5-6 hrs. Delish! You can vary the recipe by adding your own favorite veggies or spices too.

Peachy Pumpkin Bread
Every once in awhile when I’m trying to create a new recipe, I’m pleasingly surprised by how great it turns out. This is one of those recipes. It’s even better than I thought it’d be.
1 (29-ounce) can sliced peaches, drained and cut into tiny pieces
1 egg
2 egg whites
1 (14-ounce) box quick pumpkin bread mix, dry (I use Pillsbury.) Do not make as directed on box.
1 cup quick-cooking oats
1 cup water
• Preheat a slow cooker to high for 10 minutes.
• Spray the slow cooker with nonfat cooking spray.
• With a mixer beat the peaches, egg, egg whites, pumpkin bread mix, oats, and water together for 1 1/2 to 2 minutes or until well mixed.
• Pour the mixture into the prepared slow cooker.
• Lay a paper towel on the top of the slow cooker. Put the lid on the top of the paper towel to cover.
• Cover and cook on high for 2 hours.
• Take the ceramic crock out of the slow cooker. Take off the lid and remove the paper towel. Let the bread cool for 10 minutes.
• Run a knife around the edge of the bread to loosen it from the crock.
• Place a large dinner plate on top of the slow cooker and turn it over to remove the bread. Place another large dinner plate on top of the upside down bread. Turn both plates (with the bread in the middle) over again so the bread will be facing right side up.
• Keep any unused portions refrigerated.

Do you like fish? I just tried an awesome tilapia recipe (from Stephanie's blog http://crockpot365.blogspot.com/ ). Usually I'm scared to try recipes because I don't know if I'll end up liking it. I went ahead and gave it a try. My family and I really loved it.
Here's her recipe:
Foil Pack Tilapia
-- 3 or 4 filets of Tilapia (or other favorite white fish)
--1/4 cup mayonnaise
--1/2 cup shredded cheese (I recommend using Parmesan)
--juice of 2 lemons (1 was plenty for me. I had a really juicy lemon)
--4 chopped garlic cloves (I used 3 tbsp of Spice World's minced garlic)
--pinch each of salt and black pepper
and I also added a little bit of paprika and a touch of cayenne.
Directions:
--mix all ingredients in a bowl
--lay out a piece of foil
--rub sauce mixture on both sides of fish (I added a ring of onion on top of the fish)
--fold foil over and make a little packet for the fish
--put all the packets into the crockpot
--cook on LOW for 2-4 hours; fish should flake easily with a fork
PLEASE take care when taking the packet out of the crockpot and when opening it. It will be hot.
I wanted to make it more of a meal. I added some potatoes, carrots, and onions on the bottom.
2 large carrots (sliced)
4-5 red potatoes (cut into chunks)
1 small onion (sliced into rings)
1 packet Lipton’s Garlic with Herb dry soup mix
1 cup water (or low sodium stock if you have it)
I'd suggest starting the vegetables before the fish. They take longer to get tender than the fish takes to cook. I started them at the same time, and I ended up having to finish the vegetables in the oven. So once the veggies are in for awhile, add the foil packets on top and continue to cook on low for 2 hours. Remove foil packets when fish are done and flaky. If the sauce is too runny for your taste... measure out some stock and mix with a little cornstarch. Stir the cornstarch mixture in the crock pot, and let the sauce thicken up a bit. I served this with dinner rolls topped with a melted garlic/parsley butter.

1/2 cups of Italian Seasoned Bread Crumbs
1/4 cup of milk

i wish i could say i have a set recipe for what i make in my slow cooker however i do not! i have found almost anything can be made in the slow cooker. even your cheapest cuts of meat come out tender! i make ribs in the crock pot and beef roasts and pork roasts clear down to chicken wings just flavor them with what ever seasoning you like or have extra of in the cabinet to use up. just a lil fyi also,,they did a study on crock pots if you use your crock pot 2 times a week to cook in....it only takes 80 cents worth of electric to run it for a month(which in my thriftyness thought that was awsome!)

This sounds a little strange, but it is soooo yummy! You put a beef brisket in the slow cooker, cover it with one can WHOLE cranberry sauce and one packet onion soup mix. Cook on low for 10 hours. Delicious!!
I have tried it with a roast to save a little money; still good but not as tender. You really do get what you pay for, I guess.

If you like stuffed cabbage I have a recipe for that..instead of rolling it you just throw it all in the crock pot and go. You brown 1 to 1 1/2 ground chuck as you brown that chop onion really small and put it in w/the meat to saute it. Drain meat and put in slow cooker, while you are browning meat take your head of cabbage cut it into quarters and boil it til soft, take a can of tomato sauce a can of crushed tomatos, 1/2 cup uncooked rice, season to liking, then when your cabbage is done take out and cut into bite size pieces and put all in slow cooker when done w/that put a can of tomato soup on the top and just cover.
I have been married for 16 years and my husband told me that was one of the best meals I have ever cooked... how sad is that?
