chicken bbq pizza: slice the chicken into bite size pieces, put in a skillet, cook with a little evoo and season as you like. roll out a pillsbury refrigerated pizza dough, spread with bbq sauce (any kind you like)..add a little to the chicken in the pan as well. put chicken on pizza dough, add red onions if you like, top with mozzarella cheese and put in the oven for about 12 minutes.
Variety: you can top dough with basil pesto instead of bbq sauce and it is really good with just the pesto, chicken and mozzarella cheese.
Another suggestion: slice chicken into long strips, season and cook in skillet. put in tortillas with sour cream, cheese and salsa and you have a quick fajita! you can do the same thing and make quesadillas.
a favorite side to go with chicken is some saffron rice..only takes 20 minutes. or couscous!

crm mush, crm chick, rotel and frozen chick brsts cook until chicken is fork tender in crockpot, cook noodles, add chicken mix to noodles, cover with shredded cheese bake until bubbly...huge hit with my family!

Buy a can of french fried onions (like you use for green bean casserole), crunch it up really good, dip your chicken in beaten egg, then bread with the dry onions, pop it in the oven and bake it. Super easy and has a great flavor. I think the actual recipe is on the jar of french fried onions.

What about chicken fahitas?
One i like to do with the left over roast chicken is get a can of condensed chicken soup, some mushrooms and some puff pasrty. roll out the puff pastry and cut into squares and cook as per instructions. pick any chicken left on the carcass, quarter the mushrooms and fry them in a little butter for a few minutes, add the leftover chicken and the soup as it comes out of the can, don't dilute it. cook for about 5 minutes serve over the puff pastry squares with some veg and potatoes if you like. its like an open pie. it takes about 20 mins to make and its delicious.
