To be honest, I can't really cook at all and I would like to recieve recipes from others so that I can "attempt" to cook them. The only person that eats my cooking is my daughter and she doesn't know any better. LOL.

www.supercook.com is a website that you can put in ingredients you have for example say you want to use: chicken, rice, and broccoli, on the left hand side, they have a little search type bar, and you would enter all ingredients. Then it will bring up recipes using all those ingredients, as well as list additional ingredients you would need. It would also give you how to make the recipe and everything. So if you are looking in your fridge and freezer thinking, what can i make out of this? That website is a good one, or a good one for something different too!
Or get cook books from the library!

Just starting out, the easier the better. Here is one of our favorites.



Sweet and Sour Chicken

4 - 6 boneless skinless chicken breast

1 bottle red french or catalina dressing

1 small jar of apricot preserves

1 envelope of onion soup mix



Preheat oven to 350.



Place chicken in a baking dish and set aside.



Mix the remainder of the ingredients in a bowl and pour over chicken. Bake for 50 minutes - 1 hour.



Serve with rice and a vegetable.



Here are some more easy recipes that we like:



Bisquick Pot Pie

1 can cream soup

1 9 oz. pkg. frozen mixed veggies, thawed

1 cup cubed cooked chicken

1/2 cup milk

1 egg

1 cup Bisquick



Preheat oven to 400*. In a 9" pie plate, mix soup, veggies and meat. In a bowl, combine Bisquick, egg and milk. Pour over meat and veggies. Bake for 30 mins.



Baked Ziti (this is a friend's recipe but I have made something similar and it is great)

* 1 pound dry ziti pasta

* 1 onion, chopped

* 1 pound lean ground beef

* 2 (26 ounce) jars spaghetti sauce

* 6 ounces provolone cheese, sliced

* 1 1/2 cups sour cream

* 6 ounces mozzarella cheese, shredded

* 2 tablespoons grated Parmesan cheese





1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.

2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.

3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture,

remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.

4. Bake for 30 minutes in the preheated oven, or until cheeses are melted.



Beef and Cheese Enchiladas

1 lb. ground beef or round (I used a little over a #)

1/2 c. chopped onion, or to taste

1/2 c. chopped green pepper, or to taste

1 can enchilada sauce

1 packet taco seasoning

8 oz. milk

1 can cream of chicken soup

2 c. (or more as desired) grated Cheddar cheese

1 1/2 pkg. corn tortillas, about 18 (I used 8 big tortillas...whole wheat, low carb ones)

1 can refried beans (I did not use these...I added about a cup, cup and a half of cooked rice)

I also added hot sauce and some salt and pepper to the meat



Saute ground round, onions and green pepper. Drain fat and add water and taco seasoning according to the package.Combine enchilada sauce, milk, soup. Partially cool meat mixture and add rice, 1 cup of cheese and half cup of the sauce mix/ Soften tortilla shells in microwave (I wrapped them in paper towel and microwaved them for about 45 seconds) or over steaming water for easy rolling. Spoon half of the sauce on the bottom of the pan. Spread each tortilla with approximately 1 tablespoon of refried beans; then spoon on some of the beef mixture.

Spoon on some of the cheese/soup mixture. (I filled each tortilla with approximately 1/2 cup of meat filling) . Roll up the enchilada. Place in long casserole dish. Repeat until all tortillas are used. Pour extra sauce over enchiladas. Sprinkle with remaining cheese. Bake 30 minutes at 350 degrees.



Velvet Shrimp (another great recipe from a friend)

1 Tbsp. butter or margarine

1/2 c. chopped green onions

1/2 tsp. each salt, dry mustard, basil and cayenne pepper

1/4 tsp. each garlic powder and thyme

1 lb. medium shrimp, peeled and deveined

1/2 tsp. minced garlic

1 c. heavy or whipping cream

1/2 c. shredded Muenster cheese



Heat a 10 inch skillet over high heat about 1 minute. Add butter. Stir in green onions and 2 tsp. of the seasoning mix; cook 1 minute. Add shrimp and garlic; cook stirring occasionally, 2 minutes. Stir in cream and remaining seasoning mix; cook 1 minute. Remove shrimp with slotted spoon.



Boil cream in same skillet, whisking constantly, 2 minutes. Stir in cheese, then shrimp. Serve over pasta or rice.

Tiffany, I love to cook and would like to help you. Jennifer suggested crock-pot cooking. That is a good start, although I always end up messing up the simple recipes like mac-n-cheese and hamburger helper!! Funny how my family owned a 5 Star catering company!! LOL. I have a crock pot cook book that has only crock pot recipes and they have great tips!! The one I have I got at Costco and the title is "Fix-It and Forget-It Cookbook Feasting with your Slow Cooker" by Dawn J.Rank & Phyllis Pellman Good. They are different recipes from all over the country. Sometimes it's the same thing just different spices. If you are a working Mom, it is so easy to prepare the recipes the night before and put the stoneware of the crock-pot in the fridge and take it out, put it in the electric part and turn it on before you leave for work. I even actually write in my cookbook if I like the recipe or not. If I like it I draw a smiley face and put notes. If it was good I will wirte something like "Good, a little bland and runny." Then later I make it again and add more seasonings like pepper or spices like italian seansonings, cilantro, sage, etc. It could be a simple fix like just adding some chicken, beef, turkey or chipolte bouillon. I found a great concentrate at the store called Better Than Bouillon. It's like a paste and you can add as much or little as you want to your taste.Costco just started selling large tubs of organic chicken and beef at a great value. here is and easy and I mean easy one to wow everyone!



take store bought hashbrowns, brown and serve sausage links (cut up), and a half of dozen of eggs. beat eggs, in a cassarole dish place all your ingredients bake for half and hour on 350. remove from over and top with your favorite grated cheese, return to oven to melt cheese. good for any meal...add toast and some fruit and you have a complete meal! very good and very easy!

Stick with simple stuff. Do you have a Crock Pot? If not, get one. They make it easy to fake it. Trust me, I've been faking it for years! One of my favs is frozen chicken breasts. Put a two in the crockpot and add a can of cream of chicken soup (if you are cooking four chicken breasts add another can of soup). Add a can of mushrooms if you like. Cook about 8-10 hours on low and serve with steamed rice. Crockpots are great.
