Hi Ladies,



Just wondering if anyone has a simple and easy recipe for St Patrick's day. Perhaps a salad or dessert?

Would love to entertain with some friends but wanted to get some ideas.

Here is a good fruit salad recepe for you! you will need green jello not made, container of cool whip, 1 large can of mixed fruit drained, marshmallows and nuts if you like them in it. You mix the jello powder in the cool whip then add the fruit and top with the nuts and marshmallows.

Creme De Menthe Cake
It tastes good, and it's green.


CREME DE MENTHE CAKE

1 box white cake mix & it's required ingredients
1/3 c. creme de menthe
Hershey's fudge topping
3 tbsp. creme de menthe
8 oz. Cool Whip

Using 1 box white cake mix, follow box directions except leave out 1/3 cup water and add 1/3 cup creme de menthe. Bake as instructed and cool. Frost with Hershey's fudge topping. Add 3 to 4 tablespoons creme de menthe to 8 ounces of Cool Whip. Spread over topping. Refrigerate.

corn beef & cabbage is the only dinner i've done for st. pat's:)  it is really easy...boil on stove (directions on corn beef package) or throw in crock pot with potatoes, carrots & cabbage!

PHILADELPHIA Mint OREO Cheesecake









2-1/2 cups OREO Baking Crumbs










1/2 cup  butter, melted










4 pkg. (250 g each) PHILADELPHIA Brick Cream Cheese, softened










1 cup  sugar










3 to 4 drops green food colouring










1 tsp.  mint extract










4 eggs










16   OREO Double Delight Mint'n Creme Cookies, cut into quarters, divided










3 squares BAKER'S Semi-Sweet Chocolate, melted







PREHEAT oven to 350°F. Mix crumbs and butter; press firmly onto bottom of 13x9-inch baking pan.



BEAT cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Gradually add food colouring until cream cheese mixture is of desired colour. Blend in mint extract. Add eggs, 1 at a time, beating on low speed after each addition just until blended. Pour half of the batter over crust. Remove 16 of the cookie quarters; set aside for garnish. Spread remaining cookie quarters evenly over batter in pan; cover with the remaining batter.



BAKE 40 to 50 min. or until centre is almost set. Refrigerate 4 hours or overnight. Cut into 16 slices to serve. Top each slice with 1 of the reserved cookie quarters. Drizzle with melted chocolate just before serving. Store leftover cheesecake in refrigerator.

I usually do the traditional corned beef and cabbage and a Shepherd's Pie. The Shepherd's Pie is easy and can be made ahead. Here is the recipe that I use:



Irish Rovers Unicorn Pub Shepherds Pie



2 pounds of lean ground beef

1 cup of onion, diced

1 cup of carrots, diced

1 cup of celery, diced

1 1/2 cups of corn, fresh or frozen

2 Garlic clove, minced

Salt to taste

Pepper to taste

1/2 teaspoon of nutmeg

8 ounces of beef broth

2 tablespoons Butter; mixed with 2 tablespoons of flour

2 pounds of potatoes; cooked and mashed

Butter



Cook ground beef in frying pan until brown. Add onion, carrots, celery, garlic, salt, pepper and nutmeg. Lower heat and cook for 10 minutes or until vegetables are wilted. Add beef broth, bring to a boil. Stir in enough of the butter/flour roux to make a thick gravy to bind the filling. Pour into large shallow baking pan and cool. The filling should be about 1-1/2 inches deep. Cover the meat mixture in the pan with the corn and then top with the hot mashed potatoes. smooth potatoes evenly, brush surface with butter. Bake at 325ºF. for 35-40 minutes.



The Irish Rovers, of "Puff the Magic Dragon" and "The Unicorn" fame, own a very successful "Old Country Pub" in Calgary, Alberta. Their Shepherds Pie is justly famous. Vincent Lee, kitchen manager at the Unicorn says the recipe came directly from Ireland via the Irish Rovers more than 10 years ago.
