1 pint strawberries, halved
4 skinless, boneless chicken breasts, cooked and torn
1 bunch spinach leaves, torn
1 avocado, sliced
2 tablespoons sesame seeds
2 tablespoons poppy seeds
caramelized almonds
Combine chicken and spinach, tossing to mix. Add the dressing and toss. Garnish with strawberries, avocado, nuts, sesame seeds and poppy seeds.
To make caramelized almonds: (These yummy nuts keep indefinitely and make any salad a special treat.)
Place ¼ cup granulated sugar and ½ cup slivered almonds (or other nuts) in heated skillet over medium heat. Stir until nuts are brown and coated. Watch closely and stir often. Placed on waxed paper to cook. Store in zip-lock bag or airtight container.
Dressing:
Combine ½ cup sugar and ¼ cup cider vinegar, stir well. (If sugar doesn’t dissolve, warm mixture to make it dissolve.) Add 1 ½ teaspoon minced onion, ½ teaspoon salt, ½ teaspoon Worcestershire sauce, ½ teaspoon paprika and ½ c.
vegetable or olive oil. Mix well and refrigerate several hours in advance for flavors to blend.
