So we had a soup food day at work. With everyone else bringing hot soup, I decided to try something different. My strawberry soup went over REALLY well, and many people requested the recipe. This can be served as a cold soup or frozen into popsicles.
2 cups of strawberries (fresh or frozen-I prefer fresh)
1 cup Vanilla yogurt
1/3 cup orange juice
2/3 cup 2% milk
1 tsp vanilla
1/4 cup sugar
Place all ingredients in blender and blend until smooth.
Serve as soup with a dollop of whipped cream. Enjoy!
You can make it healthier by using skim milk, fat free yogurt, splenda (or another artificial sweetener of your choice), and fat free/sugar free whipped cream.
