Summer lunch ideas.

Hi Moms,



Tomorrow is the last day of school for my kids for the summer. I am trying to find some cheap and easy lunch ideas now that they will be eating at home everyday of the week. I want to find a variety of things to feed them. Some things hot and some things cold.Any ideas would be greatly appreciated.

Check out allrecipes.com I believe that's the site. Sometimes Rachel Ray on the food network has some kid friendly ideas.
I've seen edible finger paint and playdoh lol so they can do an art project then eat it....i guess...lol
Even doing things like cultural trips around the world in your own kitchen might be fun.
Pick a country and find a easy to do recipe...like Chinese stir fry or....chicken yakitori from Japan (chicken on a stick). Perogies that you can buy from the store and make a Russian meal...just might be fun and the kids can help with it :D

hello........my son loves spinach and ricotta canneloni, egg and bacon pie(it is more like a crustless quiche) where i chop onion, bacon and any left over vegies and mix with some whisked eggs and sharp grated cheese.mix altogether and pour into pie dish and bake until cooked.

fried rice is another favorite of ours as well as home made pizza.

salad rollups...like salad on pitta bread.

fruit kabobs dipped in yogurt.

i also do chicken and sweet potato risotto which is sooo good.

sorry i cannot provide recipes....but if you do a search on internet you should be able to find most of them.hope this helps...

I home school, so I face this issue every day - I have found it is often easier to prepare a light meal as opposed to individual sandwiches. We eat tuna and noodle - tuna, mayo, mustard, chopped celery & green onion mixed w/ pasta - this also works for chicken. Somedays we do lunch meat roll ups with veggies and dip, cut fruit is a wonderful filler, deviled eggs is a favorite - add sides and you have a meal, pancakes are great for lunch and can be served w/ eggs, sausage or bacon, fiesta dip - refried beans, lettuce, tomatoes, cheese and salsa served with chips, tortilla pizzas - top a tortilla w/ tomato sauce, cheese and pepperoni - pop it in the oven until the cheese melts, meatless spag, mac & cheese, crackers w/ lunchmeat and cheese. I hope these ideas help!
